Simple Tomato, Bean, and Spinach Pasta

What you need: 

1 pint cherry or grape tomatoes, halved
9 oz package of fresh spinach, chopped
1/4 package firm tofu pressed and cubed
2 cloves garlic minced
1 Tablespoon olive oil
1/2 can great northern beans, rinsed and drained
2 cups prepared whole wheat penne pasta
salt
pepper
Spike, Mrs. Dash, or other seasoning blend
red pepper flakes
red wine vinegar

What you do: 

This is quick and pretty painless meal to prepare. Delicious too!
Heat oil in large skillet over medium/medium-high heat. Add halved tomatoes and tofu, saute until they begin to caramelize. Add garlic during the last few minutes to saute, but prevent burning of the garlic. At this point add the salt, pepper, seasoning blend, and red pepper flakes to taste
Then add spinach to skillet, cover stirring occasionally until the spinach is wilted and reduced in size.
Mix in beans and pasta. Stirring over heat until the dish is warmed throughout. Reevaluate the seasoning of the dish at this point adding salt/pepper/etc as you see fit. Lastly add a couple of splashes of red wine vinegar to the pasta mixture, stir, serve, and enjoy.
