Red Beans and RiceIngredients (use vegan versions): white rice...any kind will do, just follow the instructions on the box to make as many servings as you want
2 cans of kidney beans
bouillon paste - I like the Better Than Bouillon organic brand the best. They have vegetable, no beef, and no chicken flavored
vegan butter or olive oil for the rice
optional: salsa (if you want to spice things up)
Directions:This is just plain old red beans and rice, the bouillon is what makes it into a meal I can eat day after day and not get bored. Dump 2 cans of kidney beans into a pan, bring them almost to a boil and then let the pan simmer for about 20 minutes.
Follow the instructions on the rice package to make about 6 servings..or really however much you want. I like to make a big pot so I can just reheat it during the week.
Add about 1 tablespoon of whatever flavor bouillon you like to both the rice and beans while they're on high. My husband (who is not a vegetarian) found that he really liked the no chicken and no beef flavors. He said it sort of fooled his taste buds into thinking he was eating meat and it was one more meal we could eat together.
