Yup, this is awesome, even with no veggies added at all.  So simple, but it doesn't really need anything else.  I ate the entire batch over the course of today--some with lunch and some with dinner. Smiley

I thought the two tablespoons of soy sauce would make it too salty, but it was perfect.  I used low-sodium though like the recipe said.

I just made this, and it is absolutely delicious!  I will definitely be making it again soon, i bet it would make a lovely breakfast wrap with some guacamole and vegetables!

Yeah I know, people say this all the time, I know this recipe doesn't need another shining review, but... its fricken awesome.  I followed the recipe EXCEPT instead of using a tbsp of oil I only used 1/2 a tsp and a nonstick skillet.  Also this says it makes a few servings but no way I destroyed that scramble and don't feel bad about it since I used so little oil the calories were still under 500 for the whole thing and the total fat was also relatively low.   Thumbs Up

i made this again today and and put it in a wrap with avocado, tomatoes, salsa and cayenne pepper...delicious! i can see this fast becoming a staple in my diet.

This is such a great recipe. It is really basic and good as is, but also great to elaborate on. Last night, I added in green bell pepper, mushrooms and onion. I served it with onion roasted potatoes and green beans for dinner. My bf added some vegan bacon bits to his. Yum! Thanks!

Very tasty and quick to make! The bricks of organic tofu we get are quite large so we doubled the onion powder, bragg's, nutritional yeast, and tumeric. We also added a teaspoon of garlic powder. Makes great leftovers as well!
