Spicy Salsa! Tofu Scramble

Ingredients (use vegan versions):

    1/2 a small red onion
    3/4 cup salsa
    12 oz. extra firm tofu
    1/2 teaspoon turmeric
    olive oil (2 tablespoons or so)

Directions:

Chop the onion up and throw into a pan with the olive oil. Saute over medium-high heat for about 5 minutes, or until onion is translucent.

In a medium bowl, mix salsa, tofu, and turmeric. Pour mixture into pan with onion and saute for about 5-10 minutes, depending on how browned you like your tofu.

I really like this recipe because it's super-simple and super-yummy! I eat this more than anything else!

after adding a little salt and chickybaby seasoning, i was pleased at how fast and great these were with so few ingredients! the salsa wasn't overpowering and flavored the scramble nicely. will definably put into the scramble rotation, esp for when i'm out of nooch.

I followed this recipe exactly and it turned out great. So easy. I usually put soy sauce in all my tofu scrambles but decided not to this time. I wanted to stick with the recipe and it was super good! I ate it with chopped cherub tomatoes and cayenne pepper for an extra kick. Very good. This might be my new favorite tofu scramble. Thanks! Yummy!  I didn't have any onion on hand so I used green onion and threw in some baby bella mushrooms.  Followed the rest of the recipe to the letter and it came out fantastic.  If you haven't made a tofu scramble before, don't panic when you first start cooking it because it will be slightly soupy -- the water will evaporate off.  I never liked eggs or scrambled eggs when I  used to eat eggs so I have never been fond of tofu scrambles until now.  It was quick and easy to make and tasted really good.  I will definitely use this recipe again.

When I make this, I also add some garlic and 1/2 a bag or so of frozen "pepper stir-fry", which is just onions and red, green and yellow peppers.  Makes it look really pretty.  This is so good that I've taken it to omni pot lucks and had everyone rave about the amazing "eggs">  Even after i tell them it's not eggs but tofu, they still want the recipe! Thumbs Up

Oh my goodness!  This was so freakin good!  We were just going to have it one day, but ended up making two mornings in a row!  It doesn't look very filling, but we ate it with some toast and it was EXTREMELY filling!  My SO, who normally eats a lot of food, couldn't finish!  Well, at least now we have some leftovers for tomorrow morning!  VERY VERY VERY VERY VERY VERY good!  I printed it out and put it in my cookbook, so I could constantly have it on hand. 

Oh, just a tip.  Try it with the Habanero and Lime salsa from TJ's.  I really liked it with that while my SO liked it with pace.

This was very simple and tasted really, really good in our breakfast burritos. Just put some of the tofu, along with 'sour cream' and hot Boca breakfast links, in a warm flour tortilla and it was delicious.

Are you supposed to squeeze all the water out of the tofu before you mix it with the other ingredients or just toss it in as is? Embarrassed I don't know things...

This was really simple and pretty good.  I only used about 2tsp of oil and 1/2 tsp of curry powder instead of tumeric ( I don't have any) but it turned out good and I will more than likely make again.
