Spicy Carrot SoupIngredients (use vegan versions): 1 bunch green onions
6-7 carrots, peeled and chopped
3 cloves garlic, freshly minced
2 medium golden potatoes, peeled and chopped
1 large onion, chopped
4 cups veggie stock
2-3 teaspoons freshly minced ginger, to taste
olive oil
1/2 teaspoon salt, or to taste
1/2 teaspoon crushed black peppercorn, or to taste
1/2 teaspoon white pepper, or to taste
pinch turmeric, to taste
Directions:Heat oil in pan. Add garlic and onions. Saute until clear.
Add carrots, potatoes, ginger, salt, black peppercorn, white pepper, turmeric, veggie stock. Bring to a boil. Reduce heat, cover and simmer until potatoes and carrots are quite soft.
Puree entire mixture in food processor or blender, till well blended, creamy and smooth.
Garnish with chopped green onions.
Serves: 4-6
