Beet and Corn SaladIngredients (use vegan versions): 1 can sliced or diced beets, rinsed and drained
1 cup fresh or frozen corn
1/2 small white onion, minced
1/4 cup fresh parsley, minced
1/2 cucumber, diced
1 teaspoon dried dill weed
1 teaspoon garlic powder
1/4 teaspoon black pepper, or to taste
1/2 teaspoon salt, or to taste
1 small lemon or 2 tablespoons lemon juice
2 tablespoons red wine vinegar
Directions:Mix all ingredients in bowl. Let sit for at least 30 minutes in the fridge. Stir again before serving.
Serves: 2
