Totally Rad Pad Thai

Ingredients (use vegan versions):

    200 grams (7 oz) rice stick noodles
    2 tablespoons vegetable oil
    2 cloves garlic, finely chopped
    substitute for 4 eggs (use "amazingly simple egg" recipe on this site, but add another 1/8 cup water for each egg)
    1 tablespoon rice vinegar
    2 tablespoons soy sauce
    2 tablespoons brown sugar
    1 red chili, seeded and diced
    2 cups bean sprouts
    4 green onions, chopped
    1 tablespoon lime juice
    1/4 cup crushed peanuts

Directions:

Boil water and cook noodles for 1-2 minutes, or according to directions on package. Set aside.

Heat oil in a wok or large pan over medium heat. Add garlic and cook for 1 minute. Add "egg" mixture, then quickly add noodles. Toss noodles in egg mixture until they are fully coated and no liquid remains.

Mix together vinegar, soy sauce, sugar and chili and stir into noodles until evenly coated.

Toss in remaining vegetables and lemon juice and cook for 1 more minute. Serve garnished with crushed peanuts.

Add different vegetables for variation, such as red peppers, broccoli or carrots. Also great with tofu marinated in soy sauce and stir fried.

Serves: 4

Preparation time: 15 minutes

yuuuuuuummmmmmmmm... i love pad thai so much! i love ANY thai food so much tho Wink

this was great, tho i had to make a few adjustments due to lack of some ingredients..

 i didnt have a red chili so i used chili paste.. and alot of it  Evil i think about a 3-4 tablespoons hehe and i didnt have peanuts so i subbed it with some peanutbutter mixed into the sauce..

since the egg recipe on vegweb that the recipe suggests is for baking, i used tofu instead.. i added a whole bunch of veggies too including sliced onions, green peppers, zucchini and chopped tomato.. and i mixed in cilantro after i was finished cooking..

it is some of the best pad thai i have ever had.. and would be even better with the crunchy chopped peanuts on top.. i will do that next time, cuz i for sure will make this again! thanks for the recipe!

I just got done making this recipe and it was awesome!!!
I used half the amount of pepper, since i'm not fond of spicy...plus added shredded red cabbage and extra lime!

This was amazing!  It was my first (but definitely not last) attempt at making pad thai (or anything thai, actually), and I totally thought I messed it up the whole way through, but it came out perfect.  I added mushrooms, sugar snap peas, and left out the sprouts (didn't have any).  This was sooo amazingly good.  Can't wait to make it again. I also made it milder since my fiance can't handle the spicy.  I'll post a pic, though it's nowhere near as pretty as okto's.  Thanks!!!!  Smitten

Hmm... anyone have any idea if flax eggs would work here?  I usually use ener-g but I think I'm out...
