Caitee's Crazy Cookies

Ingredients (use vegan versions):

    2 cups flour
    3/4 cup sugar
2 teaspoon vanilla extract (I used double strength)
    1 teaspoon baking powder
    1 egg replacer
    1/2 cup vegan margarine
    2 tablespoons oil
    1/4 teaspoon salt

Directions:

Preheat oven to 350 degrees Fahrenheit.

Cream together the egg replacer, sugar, margarine, vanilla, and oil.

Add the dry ingredients to the sugar mixture and stir until combined.

Drop onto a cookie sheet and bake for about 10-15 minutes.

Viola!

Preparation time: 30 minutes max.

The dough was delicious, and it felt quite sinful. I don't really like cookies, and I thought they were decent, but  my omni sister disagreed. But they all still seemed to disappear...hmmm... I think if I made them for omni's again I would roll them in sugar, just to make them that little bit more unhealthy.
And, the dough is great for dying and molding into shapes and letters... if that's your thing.

Are these cookies crispy?  I'm looking for a crispy butter/sugar cookie recipe.

If you squish the dough flat they will be. I like mine soft and fluffy so I just left them in balls when I put them in the oven. And they will crisp up more if you cook them for longer or leave them on the cookie sheet to cool.

soft and buttery! i used light brown sugar cuz it's all i had, added 1 tsp of almond extract, and topped with one whole almond and some fresh ground nutmeg and cinnamon. squishing them into little pancakes gives them perfect crispy edges and a soft middle. they were really quick and easy. i also wouldn't bake them for more than 10 mins...depending on your oven.

I have nothing bad to say about these cookies! They were awesome and are best when still warm.

I just made these and  they were awesome!!!!  Thanks! Smiley

I toped them off with a simple icing, 1 cup powdered sugar, ½ tsp. vanilla and 1 TB water.

Ya' know, these cookies really do taste EXACTLY like the packaged sugar cookie dough. It's unreal. These cookies are much better eaten warm when they are soft and gooey, but still good room temperature, they just harden quite a bit. I would add a bit more sugar next time, but if I served these to people, they wouldn't believe I made them myself. They would be looking for the packaging!

These are really good and quick! I don't think I know what Pillsbury dough tastes like..but this dough was good..and the cookies are good! I actually added 3 tsps of vanilla..and tasted the dough, and decided to add more..so I poured in 1+ more tsps (total of 4+). I like the extra flavor. I used Ener-G egg, whole wheat pastry flour, and baked them for about 11 minutes.  I don't really like using EB for baked goods (b/c it's expensive!), but these are a nice treat.  Laugh

Thanks! These were excellent. I added about a 1/4 cup of pecans and the cookies turned out like pecan sandies, everyone loved them.

well i followed the recipe and made the dough but the problem was that the dough was not like dough it was like powder so i added some oil and water and a tad of EB. everything seemed fine until i went to bake them then when i took them out they were nice and crisp on the outside and on the inside they were kind of hollow and on the bottom they were chewy and gooey! i don't know what i did
wrong! HELP! the cookies tasted great though. but they aren't like cookies!  Sad

What did you use as your egg replacer?

I did the same modifications as last time (see past review), and made up a quick lime icing for the tops. I really like these cookies, and made them for the cookie exchange (and they were a hit with our dinner guests).  Smitten

These were really good and super easy.  I didn't have Ener G egg replacer so I had to use applesauce as an egg replacer and it worked great.  I sprinkled the cookies in colored sugar before I put them in the oven.  They turned out excellent.  Great recipe!
