Shortbread Cookies

Ingredients (use vegan versions):

    3/4 lb (aka 3/4 tub) of vegan margarine
    1 cup of sugar (a very fine grain)
    1 teaspoon vanilla
    3 1/2 cups flour ( I used white but I'm going to try it with Spelt next)
    1/4 teaspoon salt

Directions:

Cream vegan margarine and sugar together.

Add vanilla and cream some more.

Add flour then salt and mix till just mixed.

Turn out onto a floured counter and press into a disc shape. Wrap in plastic and refrigerate for 30 minutes.

Now preheat the oven to 350 Fahrenheit 180 celcius. After refrigeration, roll dough out to about 1/2 inch thick. Cut out into desired shapes and back for 20-25 minutes.

This is a really good basic recipe. You can dip the finished product in chocolate or roll them in cinnamon and sugar before baking. I am currently cutting them into tombstone shapes so they can top a vegan pumpkin chocolate cheesecake for Halloween! Enjoy and Hurray

Serves: whyole mess of cookies

Preparation time: total 30 min baking and chilling an hour or so

this made a hard, crunchy cookie. my mom liked them, but i like my cookies softer. to get the colors fun, i dyed half the dough and rolled them each out into rectangles and then stacked them. i then tried rolling them together, but they broke up a lot and, ta da, a funky cookie.

These were really good!!! I loved them! I went crazy baking them for Valentines day :P

Glad you guys liked them, I generaly prefer softer cookies but these make great shapes, and hold up in a big cold glass of vanilla soymilk yummmmmmmmmm
