Maple and Brown Sugar Pumpkin Casserole

Ingredients (use vegan versions):

    2 15 oz. cans of unsweetened pumpkin
    1 apple chopped
    1/3 cup of raisins
    1/2 cup of brown sugar
    2 teaspoon of maple syrup
    pecans
    cinnamon, ground cloves, nutmeg to taste

Directions:

Mix all ingredients and spoon into a casserole dish. Bake at 375 for 20 minutes.

Serves: 6 or more

Preparation time: 30 min.

Just made this and its in the oven.  I substituted roasted sunflower seeds for the pecans, since my son has a tree-nut allergy.  Also, I used a fresh pumpkin instead of pumpkin puree.  I will let ya'll know how it was and post a picture!
