Peanut Butter Rice Snacks

Ingredients (use vegan versions):

    1/2 cup peanut butter
    1/2 cup liquid sweetener of choice (rice syrup, agave nectar, etc.)
    1/2 cup chopped nuts
    1/2 teaspoon vanilla
    1/2 teaspoon cinnamon
    2 cup rice cereal
    carob, coconut flakes, etc

Directions:

1.  Mix together peanut butter, sweetener, nuts, vanilla and cinnamon.

2.  Gently add rice cereal.

3.  With a bowl of water near by, wet hands and form mixture into small balls.

4.  Roll balls into other toppings for additional treats or cover w/ a thin coat of chocolate.

5.  Refrigerate/freeze and enjoy!

I used maple syrup and almonds. I didn't measure anything because I was trying to quarter the recipe, and the balls didn't end up holding together. But I ate the stuff because it was delicious!

I just made this.  I used maple syrup and 1/2 of Mt. Evans Nut & Berry Trail Mix (sunflower seeds, almonds, cashews, coconut, dates, raisins, & currants), because I wanted to increase the nutritional value (sunflower seeds & peanuts create a complete protein). 

I ended up mixing the peanut butter, syrup, vanilla, and cinnamon in a sauce pan and heated it over low heat.  Then I added 1/2 tbsp of tapioca flour to help it bond and prevent it from being too sticky (cause I have a toddler in the house).

Next,  I mixed in the trail mix and added the rice cereal.  After letting it cool, I made little balls and rolled them in coconut.  It turned out great, and I didn't even need to refrigerate them. My husbands loves it!

Hint:  Rub some food grade oil into your hands before making balls to prevent it from sticking to you.

Update.  My son tried these when he woke from his nap, and of course he loves them too.  I think next time I will try to reduce the amount of sweetener because there is nothing worse than a toddler pepped up on sugar.  These really have the potential to be a great protein rich snack,  Thanks for posting this recipe   Smiley

I made mine with chocolate rice cereal, omitted the liquid sweetener and added a bit more peanut butter.  Placed them in the fridge overnight and they turned out very good.

I used Starbucks hazelnut syrup and roasted almonds. I made some with chocolate peanut butter and some with crunchy almond butter. So good. My boyfriend smelled me making them from across the room and was like "woah, what smells so good?" I put them in the oven for a few minutes so they were warm and toasted tasting. A nutritious favorite for me, now.

I love this recipe!  I make it regularly and always change it up.  I add oats to the mix and different kinds of nuts.  I don't roll them in anything, just leave them nice and sticky.  They are delicious!  Definitely worth a try!!
