Tomato & Mushroom Grilled Cheese Sandwich

Ingredients (use vegan versions):

2 thick slices of bread
1 med tomato
organic mushrooms
2 slices of soy swiss cheese
Vegenaise
black pepper
oregano
garlic powder

Directions:

Spread bread with a thin layer of Vegenaise.

Layer tomatoes and mushrooms over one side, sprinkle with black pepper, and oregano.

Add both slice's of swiss soy cheese to other slice of bread.

Close sandwich.

Sprinkle with garlic powder and grill.

Serves: 1

don't knwo what it is, wouldn't know where to even begin to look for that in the super market?

From a quick google search Veganaise = vegan mayonnaise....pretty easy to find in most healthfood stores

This is a great sandwich. I make it all the time. I like to sautee the mushrooms first, then but them in the sandwich. The flavor really works with the fresh tomatoes. I've never made it with veganaise, and I haven't tried it with swiss (only Jack style) "cheese". It's super yummy.
