Corn Fritters

Ingredients (use vegan versions):

    1 can corn, loose or 1 bag frozen (defrosted overnight in fridge, drain all liquids)
    1 med onion, diced
    1 celery stalk, diced
    1/2 green pepper or red bell, diced
    egg replacer, equivalent to 1 egg
    2 teaspoons baking powder
    1.5 cup flour, all-purpose (experiment with your favorite)
    Tabasco sauce or diced habanero - to your taste
    salt & pepper
    Dutch Oven with vegetable oil, heated for deep frying
    Dipping Sauce:
    1/2 cup vegan mayonnaise substitute
    1/4 cup mustard (spicy or regular)
    1/4 cup ketchup or tomato paste
    1/2 packet sugar substitute

Directions:

Cut vegetables into 1/4 inch dice. Mix the egg substitute, flour and baking powder and seasonings with sufficient water to form a fairly firm batter.

Combine all ingredients including corn and allow to rest for 15 minutes prior to deep frying.

When oil is ready, drop batter in oil by the tablespoon, do not overcrowd pot.  Flip the fritters on both sides until golden brown and done in the middle.  Serve hot with dipping sauce.

Dipping Sauce: combine all ingredients well (should look something like thousand island dressing in color).

Serves: 8
