Banana Black Beans

Ingredients (use vegan versions):

    2 cups cooked black beans
    1/2 cup coconut milk (light can be used)
    1/4 cup plain soy milk
    2 bananas, chopped into 1/2 inch pieces
    2 stalks green onion, diced
    1 heaping teaspoon hot chili powder

Directions:

1) Place cooked black beans into a medium saucepan with coconut milk & soymilk and heat on medium-low for about 3-4 minutes.( In a pinch I have used a large 19 ounce can of black beans instead- just make sure to rinse well in a colander before using to get rid of excess salt!) Stir occasionally.

2.) Add chopped green onion & hot chili powder, and allow the liquid to reduce and become bubbly, still stirring occasionally.

3.) Add chopped banana, stir, and allow to heat through. ( Banana shouldn't be added too early or else the pieces lose their shape and become mushy)

Served on a bed of brown rice, with a salad on the side this is easily one of my favourite quick and healthy meals and is so, so delicious!!!

Note: measurements for the coconut and soy milks are approximations since I never measure- I eyeball; you may need to adjust amounts due to your own tastes.  YUM!

Serves: 4

Preparation time: 5 min.

Yummers! I just had this again for dinner last night and I forgot how good it is. It seems like a strange combo but the banana and black beans complement each other so well.

I was pleasantly surprised by how good this was! I was a little unsure of the combination but it is definitely a keeper! I did add a pinch of cumin because I used spicy paprika instead of cayenne. I was prepared to be underwhelmed, but it is GREAT!

I gave this recipe a try in my continued attempt to get my kids to eat more beans. The addition of bananas seemed really odd for my tastes, but almost assured my kids would eat it. They did of course, and I was surprised at how much I enjoyed it as well!

I served it over rice, and next time will use more liquid to make it a bit more saucy. Thanks for the recipe!

OMG!!!!!!!!!!!! SO GOOD!!! srsly.. these are so damn tasty.. i made some changes (i dont think i can make a recipe without making changes haha)

my beans would not get soft even after 3 hours of cooking them, so i gave up and blended them with about a 1/2 cup of water until they were the consistency of really really coarse cornmeal...

then I fried them and the onions in a few tablespoons of coconut oil.. after that finally got them soft, i threw in the milks and spices (i doubled the chili pepper cuz i like it spicy and added a teaspoon of cumin) let that cook for a few mins, then at the end i threw in a couple spoons of nutritional yeast, some salt and the juice from a quarter lemon to bring down the sweetness just a bit..

they smelled like they had butter in them, but have a really surprising taste.. i ate a spoon and went "mmmmmmm yummy!" and now i am eating tacos with them Smiley

next time i make them i will succeed in getting my beans soft and try this with whole beans... but they are super good refried like i just made them.. thanks so much, i never would have thought of this on my own..

this is fast becoming my favorite (fast + cheap + tasty + filling) recipe.
a can-o-beans, half a can-o-coconutmilk, one bananer, some cumin and chili powder, and a grilled tortilla.
yes yes yes, yum.

I was really skeptical of these beans when I first saw the recipe, but I must say that I was totally blown away!  They are soooo amazingly good, I will definitely be making them again soon.

Oooooh! This is one of our new favorites (which I wasn't expecting). I sauteed the green onions (3, I think) for a couple minutes, added a 25 oz can of black beans (rinsed), and added 1/2 can coconut milk, s, p, cayenne, cumin, and chili powder, and 1 banana. I didn't add the soy milk. I let it bubble for a while, but I wanted it saucy. I added the rest of the coconut milk to my brown rice, and added chives. Sooo good! I think I'll be making this for a visitor this week.  Cheesy

This might sound like a weird combination but it is so good!! I didn't use the soymilk and only used 1 banana. It was so yummy!! Thumbs Up

This was so delicious! I followed the recipe exactly except for adding a bit of cumin and cayenne instead of chili powder (b/c i didn't have any) and omitting the soy milk. I also used a ripe plantain instead of a banana.  I served my omni boyfriend and carnivore friend this and they LOVED it. what's most appealing is how simple and quick this dish is to make! Awesome recipe, thanks so much!
