Veggies YUM! Salad

Ingredients (use vegan versions):

    1 ear corn, corn removed
    1/2 avocado
    2 carrots
    2 radishes
    olive oil
    Braggs Amino Acids
    lemon juice

Directions:

This makes a nice, light salad. Very filling too!

Prepare your veggies: remove corn from cob, dice avocado, and then chop up the radish and carrots. You can also use a veggie peeler on them to make nice, thin "disks" or threads.

Combine all prepared veggies in a bowl and toss. For the dressing, I just a drizzle of oil, Braggs, and a nice squeeze of lemon. It is very light--you don't want your veggies swimming--but you can adjust to taste.

That's it! Eat it up!

Serves: 2

Preparation time: 15 minutes

I tried this last night and it WAS yum! Very easy to make (I like that! Cuz I be a lazy mutha.) I diced all the veggies, used Tamari sauce (I didn't have Braggs), and added some coarse black pepper--it turned out great. Thanks Puppy! ;-)

I made this for lunch today and it was so good.  I never really thought about eating raw corn before.  Corn was always something you grilled or boiled or popped.  I used lime juice instead of lemon and just put the whole avocado in it.  Next time I may toss in a handful of fresh cilantro.  Not because it needs any changes, just because I'm addicted to the cilantro-lime combination.

Thank you, BayPuppy, for this recipe! I just made it to go with our Mother's Day dinner.
I doubled it and added a little extra avocado and radish, and shredded the carrot. The flavours all go really well together.
