Get Your Groove on Veggie Burgers

Ingredients (use vegan versions):

    1 can of beans or lentils
    your favorite veggies such as carrots, zucchini, or broccoli
    1/2 cup salsa
    1 Tablespoon of sesame oil
    1 Tablespoon of vegan Worcestershire sauce
    1 cup of rolled oats
    1/4 cup cornmeal
    garlic powder
    onion powder
    salt and pepper
    1/4 cup barbecue sauce

Directions:

These measurements are estimates!

Drain and rinse your beans or lentils (I used lentils in this recipe, but black beans, red, or pinto would be good too). Put in food processor until pureed.  Put pureed beans in mixing bowl.

Put your veggies in the food processor. I used carrot and zucchini. You can't even really taste them in the final product, so you can sneak in any veggies you want!  When processed I had about a cup. Add to mixing bowl.

Process the rolled oats in the processor to create a powdery grain. If you want your burgers to have more texture, you could skip the processing part.

Add to mixing bowl and stir until combined evenly. Then add the seasonings, salsa, and barbecue. If it seems too wet to make patties, add some cornmeal, which is what I did. Then I was able to form about 6 patties. Salt and Pepper the tops.  I lightly oiled a cookie sheet and baked for about a half and hour on 350. I flipped them about half way through.

They were firm and juicy when done. I served on whole wheat bread with Dijon Mustard and Vegenaise, with some baked potatoes.

The directions say  When processed I had about a cup.  Again, this was just me estimating after I had made the burgers. I didn't really measure as I was going. I think about a cup more or less would be fine. I hope you like them! Both my husband and son liked them, which rarely happens!

It did seem a little wet, so I did add some cornmeal before baking. I baked as directed. These were absolutely incredible - I topped them with some sliced tomato, dijon mustard, ketchup, and dill pickle chips. I served them with Spicy Fries. These rock!! Thanks!!

Wow! What a nice review! Thank you for trying them!  I am so glad you liked them.  My whole family liked them too, and that NEVER happens.

 I am also glad this recipe finally got posted, as I couldn't remember how to make them and had no copy anywhere! I tried to do it again and fried them instead of baking, forgot the salsa, and they were not as good. I am going to make some this week with adzuki beans, following my own recipe here.

hi.  sounds good.  i usually cook just for one, so i was wondering how should i store the leftovers?  should i freeze/refridgerate the leftovers before or after i cook them?

cut the recipe in half, then cook all of them and freeze what you don't eat in a couple of days. You might just eat them all, as they make great sandwiches for lunch (even cold).

I made these with drained chili beans, carrots, red peppers, and I used 2 T nutritional yeast instead of the cornmeal. I also omitted the barbaque sauce because I was afraid it would make them too wet. But they were still way to wet so i ended up adding probably another 1/2 c of oats. They baked very nicely though, and I don't have any bread at the moment, so I have been eating them like cookies. I think next time I make these, I will just blend up about 2+ cups of oats and try the recipe as is.

Also, I added about 2 T of ww flour to try to get them drier and it ruined the flavor. Do not add ww flour! Just add more oats.

Really tasty veggie burgers. Mine came out a little too mushy in the middle - next time I will make my patties a bit thinner so they are more consistant all the way through when cooked (I also may have added too much veggie mixture). I am also going to try adding some walnuts and apples next time.

I made these again tonight, and doubled the ground oats and used chili beans again. I don't have any vegan BBQ sauce, so I used the the sauce that the beans were in. It took longer to cook, but they are salty and delicious.

These are the best veggie burgers I've ever had!  They have the best texture, and they're so flavorful.  You can customize them with whatever ingredients you like and they come out great!  The first time I made them, my neighbor came downstairs and asked what I was making, because they could smell it all the way upstairs and it smelled so good.  They were totally shocked to hear it was home-made veggie burgers and asked for a copy of the recipe, even though they're carnivores.  Definitely give these a try!  Even my meat-loving mom liked them, and she's pretty anti-vegan food.

Absolutely delicious! Followed the recipe exactly (used carrots and zucchini and broccoli for the veggies) and they were splendid.
