Samosa Quesadillas

Ingredients (use vegan versions):

    2 Tablespoon scallion, diced
    2 cups mashed potatoes - perfect with leftovers
    1/2 cup peas (fresh or frozen-thawed)
    1 1/2 teaspoon curry powder (more if desired)
    4 8-inch Tortilla wraps
    1 Tablespoon Olive Oil
    salt and pepper to taste

Directions:

Heat oil in pan and add scallion. Cook until tender. Add mashed potatoes, peas, salt/pepper and curry powder and mix together until heated thoroughly. Add more curry if desired. In a skillet, spray with oil and lay down tortilla.  Scoop potato mix onto half of the tortilla and fold over. Cook 1-2 minutes on each side, until golden brown. Put on plate, cut into fourths and serve. Repeat for the others.

Serve with pineapple/mango salsa!

Serves: 4

Preparation time: 20 minutes

I started out to make this because I thought I had flour tortillas left, but I ended up using corn, and they were tasty. I added a little fresh, sauteed spinach, and used coriander, cayenne, and turmeric in addition to the curry. These are simple and tasty (would be a nice appetizer). I didn't have any dipping sauce, but I think a cilantro chutney would be fabulous!

I made mine with mashed sweet potatoes, peas, corn, carrots (frozen)... sauteed onion... added the curry & spices!  This was a divine treat!  Soooooo easy & cheap to make!!!   Thank you thank you thank you!!! Thumbs Up

This was easy and yummy. The only real alteration I made was to add 1 teaspoon of nutmeg to the mix. I served it with a nice mango chutney. I think the key to making this meal great is the chutney/salsa. Next time I will try with some different chutneys. Will definately make again!

I have been meaning to make these for a long time because I love samosas, but hate that they are usually deep fried.  For once I had potatoes in the house so I finally got to make them.  I added garam masala spice to the potatoes.  I agree with the other post-ers that these would be much better served with a chutney.  Even though I had potatoes on hand, I unfortunately didn't have the ingredients to make a suitable chutney...
