Applesauce Cookies

Ingredients (use vegan versions):

    3/4 cup vegan soy butter
    3/4 cup shortening
    2 cups sugar
    Egg Replacer equiv to 2 eggs (Ener-G, etc)
    5 cups flour
    1 teaspoon baking soda
    1/2 teaspoon salt
    1 teaspoon cinnamon
    1/2 teaspoon cloves
    1 cup chopped nuts (optional)
    1 cup applesauce (plain or flavored)

Directions:

This recipe is from a friend.

Preheat oven to 375 degrees.

Cream together shortening, vegan soy butter and sugar. Stir in egg substitute of choice. Sift together dry ingredients. Mix in nuts if desired. Add dry mixture (1/3 at a time) to creamed mixture, alternately with applesauce.

Drop by teaspoonfuls onto baking sheet.

Bake at 375 for 10-15 minutes.

ALTERNATIVE: Form dough into rolls, wrap in waxed paper and chill. Slice thinly when ready to bake.

* I normally make this with either organic blackberry or strawberry applesauce.  YUM! =)

I've also made these with a mix of unbleached white flour and whole wheat flour with great results. Smiley

These are really good! They're so light and fluffy.  Pretty high in fat though.  I cut the whole recipe in half and  I used all margarine instead of shortening and butter.  I could really taste the margarine in the cookies.  Next time I'll probably add more applesauce and use less fat.

So i just made these cookies, and these taste just like autumn! the apple and the spice is great. I halved the recipe at the suggestion of another review, and i still have a ton of cookies! listening to the same person, i just used butter and no shortening, and these "cookies" are super cake-like, i'm going to call them muffin tops. i dont know if that was because of no shortening or what, but i wouldnt call these little guys cookies exactly but they are still great!

Yummy cookies! Instead of the nuts I added 1 cup coconut and I also replaced the applesause with mashed apricots. My non-vegan family members loved them, and my daughter wants the recipe so she can make more. I also used flax + very warm water for the egg replacer.  These are even more yummy with a thin glaze that I made just using some powdered sugar and silk milk.  Smitten
