Super Scrumptious Wonton Soup

Ingredients (use vegan versions):

    6 or 7 vegan wonton wrappers
    approx 1/3 cup vegan ground sausage
    1/2 cup spinach (fresh or frozen)
    2 stalks scallions, chopped
    1 tablespoon chopped ginger (fresh or in a jar)
    soy sauce (to taste)
    1 1/2 cups water
    3 cups veg broth
    small bowl of water
    1 tablespoon olive oil
    separate water to boil wontons

Directions:

I can't wait for you to try this recipe!  I apologize about the measurements of ingredients. I don't measure so much, so I kinda took a ballpark guess for them.  Play around and see what works best for you.

For the wonton filling - saute sausage, scallion, spinach (no need to defrost, just throw in pan if frozen), 1/2 of chopped ginger in a large pot with olive oil and some soy sauce (to taste) for approx 5 minutes until all the flavors combine and everything is cooked through. Remove all ingredients from pot and set aside in bowl to cool a little.

In same pot, over low/med heat, pour in veg stock and water and scrape bits of sausage off the bottom of pan. Pour in more soy sauce (again to taste) and let lightly simmer.

In another pot boil enough water to fill 2/3 of the pot. (you will use this to cook your wontons)

-Lay out your vegan wonton wrappers (purchased in an Asian food store). Make sure they are not frozen and that they are pliable.

-Put about a tablespoon of the filling in the middle of each wrapper. Take the extra water you have set aside, and with your finger brush SOME water on one half of the edge of the circular wrapper. Then fold over the the top and push down on all edges with fingers and then fork so that you have a nice semi circle. Try to make sure you don't put too much filling that you can't fold over the wrapper without spillage. Do this for all wrappers, but leave a Tablespoon of the filling aside.

-Now put the set-aside filling into the soup.

-Place each wonton gently into boiling water and let cook for approx. 2 minutes until they happily float. Then place them in soup, let sit for another 2 minutes and serve!

This soup makes me very very happy.  Again, I apologize for any measuring issues.

Serves: 4 (not sure?)

Preparation time: approx 15 min.

 Smitten  This recipe is amazing.  I add ginger to the broth as well and I add bean sprouts.  I use veggie crumbles not sausage.  I have been missing good old fashioned wonton soup! Thanks!

I'm going to give this a second shot once I get the chance. I was out of veg broth and thought I could manage using a bullion cube, not realizing that the herbs in the cube totally don't work with the flavors in wonton soup. So that was a mistake on my part, that and I completely failed at folding the wontons so most broke open. The filling is great though and will certainly love to see how it'll turn out never time.

This shredded spicy chicken you mention...Where do you get it and what is the brand name? I would love to make the wontons with that inside. YUM

Hi!  I used the Light Life Smart Strips Chicken Style (they also have Steak style, not as good in my opinion).  I put the strips through my magic bullet which shredded it up perfectly (also great for chicken salad) and then cooked it up with some cayenne, paprika, garlic salt, and chili powder.  This brand of chicken strips are the absolute best, we use them for everything.  They're sold at most of our regular supermarkets, and at Follow Your Heart, which is AWESOME!  This soup is totally worth making, and the chicken goes sooo good in the wontons.  Good luck! =)
