"Creamy" Corn Soup

Ingredients (use vegan versions):

    2 ears of sweet corn
    1 avocado
    1 clove garlic
    1/2 of a whole red bell pepper
    1/4 cup walnuts
    1/2-1 tablespoon Braggs Liquid Aminos (to taste)
    1/4 cup olive oil
    1 cup water

Directions:

I have been messing with raw foods and made up this soup tonight. It's really tasty and filling! It consists of a "base" of liquidy ingredients and then some solid stuff to mix in so the soup is chunky. If you want, you can toss it all in the blender (may need to add a little more water).

First, prepare all your ingredients.

Corn: Using a knife, cut the corn kernels off the cob. You can run the knife along the edge of the cob--this works. Put half in your blender and keep the other half.

Avocado: Cut in half. Place half in blender and chop the other half and put aside.

Bell pepper: Cut the half in half. Put one half into the blender and dice the other half. Set aside.

Place the rest of the ingredients (walnuts, oil, Braggs, garlic, and water) into the blender. Pulse blender until large chunks are broken up and then run briefly until it is smooth.  Make sure you don't run it too long (esp. if you have a Vita-Mix!) because you don't want the soup to get hot.  Adjust water if you want it a little thinner. You can also taste and add more Braggs if you want.

To serve, divide soup base between bowls. Divide up the avocado, pepper, and corn that you chopped and set aside earlier between the bowls. Enjoy!

Serves: 2-3

Preparation time: 15 minutes

i want to try this, but... does corn taste good just raw like that? i would think it would be hard and yuck.

i love raw corn! if you get good corn (sweet corn) you can just eat it off the cob. i find it is sweet and chewy. it isn't as watery/starchy as the cooked corn

ok, so i am now obsessed with raw corn. too bad corn on the cob is so &*%^&%* expensive.

I heart raw corn too. Bought some when it was on sale and wish the sale prices were permanent! I'll make this soup as soon as I'm near a food processor again because it sounds yum. Do you think it would be seriously lacking without the pepper, or do you have a good recommendation for a substitute? Not the biggest fan of peppers.

you can totally leave out the red pepper is you want. you could probably put in anything else you think would be good with corn!

my DR really liked this soup. it makes me long for summer.

I'm trying to incorporate more living foods  into my diet again and for my own personal designated "Raw Monday" I made this soup and LOVE IT!
It is satisfying and easy to make which is a major plus since I was pretty hungry after having only a smoothie and small salad all day.  I did leave out the nuts, however, as I don't have any on hand.  Thanks for this bowl of living yum! Thumbs Up

I really wanted to try this, but didn't have any corn on the cob, so I used some frozen sweet corn instead, I also left out the Braggs Liquid Aminos.

I can't wait to have leftovers for lunch tomorrow.

Just wanted to say that I made this soup last week for a Raw Vegan Potluck and it was the hit of the party.  I chopped the pieces of veggies the same size as the corn niblets.  I added chopped red onion bits as well as the other veggies.  Served with fresh pico de gallo. Cheesy Cheesy

I forgot to say that I warmed this soup up in my older crockpot.  I checked the temp and it was right around 100, which only warms but does not cook or destroy enzymes.  It was the perfect temperature for a chilly night, and made it easy to serve.   ok

that's a great idea! i should see what "low" on my crockpot will give me. i don't generally heat up my raw stuff but it has been really cold here!
