Mango Guacamole

What you need: 

two large avocados
1/2-1 finely chopped mango
1/4 of a jalapeno (add more or less to your taste)
1/2 chopped red onion
1/2-1 chopped tomato
chopped cilantro (use as much as you like)
1/4-1/2 cup of chopped cucumber (or less)
1 tablespoon cumin
2 teaspoon paprika
2 teaspoon salt
1/2 fresh lime

What you do: 

Chop up mango, jalapeno, red onion, tomato, cucumber and cilantro.
Cut avocados in half and scoop out insides into bowl. Using a fork, mash the avocado until creamy. Mix in above chopped ingredients, along with cumin, paprika and salt. Squeeze half of the lime into the mixture. If necessary, add more of the above mentioned fruits/vegetables/spices to reach desired taste.
Serve with tortilla chips and enjoy! This has been a hit with my friends.

SO HOW'D IT GO?

I feel that if I made this recipe, that I would eat the entire batch myself!  This sounds oh-so-good!

you know, I'm not a fan of guacamole, but with the mango, I bet it would be tasty! Thanks!!! I'll give it a shot! 8)

Even with an overripe mango and an underripe avocado (all I had on hand), this was good!! I did add a bit of salsa to make up for the poor main ingredients. Properly made, it must be wonderful!!
