Heavenly Mint Chocolate Chip Cookies

Ingredients (use vegan versions):

    1 cup vegan soy butter, softened
    1/2 cup brown sugar
    1/2 cup turbinado
    2 teaspoon real mint extract
    2 1/4 cup unbleached all-purpose flour
    12 oz semi-sweet vegan chocolate chips
    1/4 cup soymilk
    1/2 teaspoon salt
    1 teaspoon baking soda (heaping)

Directions:

Preheat oven to 350 degrees F.  In a medium bowl cream sugars and soy butter until fluffy.   Add soy milk and mint extract.  Combine dry ingredients in a large separate bowl.  Add creamed mixture to dry ingredients. Blend well.  Fold in chocolate chips.  Drop by the teaspoon onto parchment lined cookie sheet.  Bake 10-12 minutes.  Serve warm with a cold glass of soy milk.

This sounds divine!!! My boyfriend LOVES mint choclate chip ice cream so my guess is he would LOVE these cookies.  He is a MAJOR meat eater and i have "tricked" him so many times with vegan recipes..this is definately one i will try ASAP.....Thanks  Wink

This was pretty good. I substituted apple butter for half the butter, so i didn't really make the recipe. But still I have no complaints. Thanks for the recipe!

On second thought these were slightly dry. I had some left over dough so I tried again, but remember I substituted half my butter for apple butter so I didn't follow the recipe...Now I added cocoa (kind of a lot) and soy milk, I basically added a lot of chocolate then enough milk to get a wet dough. These came out FANTASTIC, like doughnuts but heavier, and minty, next I frosted them with Vanilla Frosting. and they were DIVINE!!

I really like these. Definately was more of a cakey cookie for me. I used reg cane sugar as I didn't have any turpinado (sp?), and maybe that is why it came out so cakey. I'm also an eyeball-er which I know is a no-no for baking, haha.  All the ingredients were in my cabinet which was great!  COOKIES!

Tried these, I think the measurement for the baking soda is off - don't heap the spoon as suggested! Because mine came out tasting really strongly of baking soda and nothing else, proving inedible. Will try again though, and they looked lovely Smiley
