Oven Roasted Baby Portabellas

Ingredients (use vegan versions):

    baby portabellas (4 per serving)
    fresh herbs (i.e. parsley, basil, thyme)
    balsamic vinegar
    olive oil
    onion
    whole garlic cloves

Directions:

Place a sheet of tin foil on a baking sheet.  Place your baby portabellas on the foil.  Choose one fresh herb and place a leaf (or piece) on each mushroom.  add a few large slices of onion, and a few garlic cloves (more for more servings, but I use about 1/8 onion and 3 cloves per serving).  drizzle balsamic vinegar (maybe 1 tablespoon per serving) and olive oil (few drops) over everything. wrap foil around veggies to make an envelope of goodness and bake at 350 for 25-35 min.

The herbs and onions will be softened, the garlic will be "roasted"/candied, and the mushrooms will be juicy!

I store the roasted garlic in a container to use on homemade bread, and eat the mushrooms immediately or save them for later use.

I use this recipe as a side for grilled tofu, or as a sandwich stuffer (after they've cooled, and been sliced) with spinach in a pita.

Serves: 1-4

Preparation time: 5 min plus baking time

Yummy! with baby garlic just from the garden and some carrots.
unfortunately basil leaves lost their taste and color.  Undecided next time i'll add them 5 minutes before taking everything out.

I have made this about 5 times now and just realized I hadn't reviewed it yet! WONDERFUL recipe! Make sure you dont go overboard with the balsamic vinegar.  Thumbs Up
