Cin-Apple

Ingredients (use vegan versions):

    6 apples (I use Royal Gala)
    2/3 cup vegan soy butter
    6 tablespoon sugar
    2 teaspoon ground cinnamon
    1 cup ground or chopped almonds
    1/4 cup oatmeal (uncooked)
    2 tablespoon vegan butterscotch or caramel sauce (caramel sauce: simmer 1:1 vegan creamer and brown sugar and 1/4 teaspoon of vanilla until sugar crystals dissolve)
    extra caramel/butterscotch sauce for topping

Directions:

Filling:  Mix everything except for the apples in a bowl and put to the side.

Apples:  Peel the apples completely. Now, this part is a bit trickier.

If you have an apple corer:  Then remove the core but make its a bit wider. Make the diameter of the core about 1 inch long. THIS NEXT PART IS REALLY IMPORTANT: Take the apple and stand it up so that if you look down on it you see the apple hole. Now cut the apple HORIZONTALLY. It might be a bit confusing but if you look at the picture it will help!

If you DON'T have an apple corer:  Then cut the apple in half horizontally.  Next get spoon and a sharp knife. This is hard because you have to spoon out the interior core so that there's about 1 inch diameter hole in the middle of both ends of the apple.

Putting it all together:  Now that you have your apples place the bottoms each on a plate. Start spooning the filling inside whole of the apple. Spread a bit of the filling on top of the bottom of the apple also. Next place the top of the apple on the bottom of the apple so it looks a bit like a sandwich.  Stuff the top hole with a bit more filling.  Repeat this with all six apples. (If you have filling left... EAT IT!) Take the extra caramel or butterscotch sauce and spoon it or pour it nicely on top of each apple. If you want to make it look VERY pretty get a few cinnamon stick and stick one into the top of the hole in the apple.  Also stick a couple of whole almonds, too in there! And Bon Appetit!

When I made this recipe my whole family LOVED it! They told me that it was amazing, but to make it even better, they would have placed it in the oven for a little while to heat it up and to make the apple a bit softer. I haven't tried that yet but maybe you could try and tell me comments!

this recipe is very... different.
but it's an idea that i love, and i plan to try this as soon as i get out of the hospital!
