Banana Coconut Cookies

Ingredients (use vegan versions):

    2 bananas, mashed
    1 teaspoon vanilla extract
    1/2 cup sugar
    1/2 cup vegetable oil
    3 teaspoon soy milk
    1 cup flour
    1 teaspoon baking soda
    1 teaspoon cinnamon
    1 cup rolled oats
    1 cup shredded coconut

Directions:

1. Preheat oven to 350F.

2. In blender/ food processor blend together mashed bananas, vanilla, sugar, oil and milk.

3. In large bowl sift together flour, baking soda and cinnamon.

4. Stir in the oat flakes and then fold in the banana mixture well.

5. Fold in shredded coconut.

6. Scoop spoon-sized portions onto a lightly oiled cookie sheet and bake for 15-20 minutes.

Serves: 18

Preparation time: 30 minutes

these cookies were AMAZING! the entire batch was gone within the hour (and i did most of the eating  Huh) i used about 1/2 cup of coconut instead of a full cup and they still came out with the perfect chewiness. they taste much like banana bread and are soo moist! thanks for the recipe!

yeah! just made these, great cookies Smiley
They're kinda slightly crispy on the outside and very moist and soft.  The few left in the tin  seem to be becoming ( Huh) more densely moist and soft as time goes on.  They won't be there long...
oh, & I used a whole cup coconut.  Yum!

This recipe is fantastico!  I didn't use an electric mixer and I just eyed the measurements and plopped all the ingredients together, no sifting and still it turned out perfect!  All the cookies were soft and fluffy as could be.

 Grin  After a day in the fridge they are even better because the oats arent as hard now so they dont get stuck in my teeth  Roll Eyes

I've made these twice now.  The first time the flavor was perfect, but they crumbled apart.  The second time I added 1 tbsp EnerG egg replacer and 2 tbsp additional soy milk (the equivalent of 2 eggs) and the cookies came out perfect.  Also I used a hand mixer instead of a blender or food processor cause I don't have either.  These are not overly sweet cookies,  I might add a bit more sugar next time too.

I just wanted to mention that I'm at a higher altitude, which may have had something to do with needing the extra moisture.

This recipie is really yummy--I did make a few changes though--I halved the oil and added chocolate chips and walnuts. They baked up really fast--only 15 minutes andthey came out great!

I LOVED these cookies!  Smitten  I even spreaded a bit of Tofutti's Cream Cheese to the top of each cookie.  SOOOO yummy and it totally destroyed my diet  Cheesy

halved the recipe, did half quinoa flakes/rolled oats. added 2 TB flaxmeal, used agave nectar instead of sugar(though a sprinkle of sucanat on top of each cookie) uhm half whole wheat/one quarter all purpose/one quarteroat flour.  coconut flakes were fine and unsweetened (who needs the extra sugar anyways?) and WHAM those puffy texturized things came outta my oven.  yummy with tea or juice or rice milk for breakfast Smiley

These cookies were amazing, they were so moist and yummy! I can't remember if I used applesauce instead of oil, but either way they were SO delicious. I made them quick to take to a movie and only baked half of the dough, so the other half ended up sitting in the fridge for a few days, but I just added a touch of water to it and it baked up just as good as the first ones, though maybe not as pretty. I love these as they are sweet enough for my hubby's monster sweet tooth, but not as bad for his diabetes as other cookies. THANK YOU!!  Smitten
