Mediterranean Spinach and Couscous

Ingredients (use vegan versions):

    2 tablespoon Olive Oil
    2 scallions, minced
    3 cups baby spinach
    1/4 teaspoon red pepper flakes
    2 cups veggie broth
    1 1/2 cups couscous
    6 Kalamata olives, minced
    2 tablespoon pine nuts
    Salt to taste

Directions:

Heat oil in a large skillet. Add scallions and spinach and cook until spinach is wilted. Add red pepper flakes and broth and heat to a boil. Once boiling, add couscous, cover and remove from heat. Let sit for 5 minutes. Take cover off and quickly give couscous a mix to combine everything. Add olives, pine nuts and salt and mix again.

Serves: 4

This was pretty good although I found out I don't like olives (!)  I'd recommend spicing it up a bit more with some more red pepper flakes, and you can never go wrong with more spinach and scallions.  Leeks might also be good.

Simple, satisfying and soul-foodish!! I used frozen spinach and had to use peanuts as pine-nuts weren't available. It is definitely a new favourite! So quick to make, so good to eat. Smitten

quick and easy!   Thumbs Up  I love it its gong to become a new "quick meal" I didn't have pine nuts, I doubled the pepper flakes and added lemon juice!

I love this recipe.  It's super quick and easy!  I make it quite often and have done a few different things each time and it always turns out excellent.  It's really good with chickpeas and extra scallions, pine nuts and pepper flakes.  Sometimes I'll add tomatoes if I have them too.  Oh so good!
