Cauliflower Ceviche

Ingredients (use vegan versions):

    1 medium cauliflower head
    1 onion
    2-3 cucumbers
    3 carrots
    2 tomatoes
    coriander to taste (I like it a lot, so I use a good bunch)
    4-6 lemons
    salt to taste
    1 tablespoon olive oil
    water (enough to cook the cauliflower)
    1 tablespoon flour

Directions:

Boil the water and cook the cauliflower with a little salt and the flour. When the cauliflower is tender (but not too tender) let it cool and chop it really fine. Dice the onion in very small pieces and add the juice of the lemon, let it rest while dicing the other vegetables as small as you can. Mix all the vegetables with the onion and cauliflower.  Add salt to taste and the oil. Mix again and let it rest in the fridge for an hour before you serve it. I like to serve it with avocado and ketchup, but it's great alone. You can eat it with tortilla chips too.

Serves: 4

Preparation time: 30-40 minutes

This was really good! I added some kelp granules, used limes instead of lemons, a HUGE bunch of cilantro, and ate it with hot sauce. Cauliflower is one of the few vegetables I'm just kind of "meh" about, but this way was really tasty. I will make it again!

This was good but only if u add the ketchup and avacados... i'm going to add some sunkist, ketchup, and jalapenos to make it more soupy and spicy post another pick (i know it sounds weird but it tastes amazing this way)... check out my recipe for vegan ceviche:
