Healthy Crunch Trail MixIngredients (use vegan versions): dried fruit and nut mix
roasted sunflower seeds
roasted edamame
baked apple chips (homemade instructions below)
flaxseed and soy cereal
Directions:To prepare baked apple chips, core one or two firm apples of your choice and cut into 1/8 inch slices. Sprinkle cinnamon if desired. Bake on cookie sheet at 200 degrees for about two hours or until crispy. If you'd rather have chewy apple rings, cut them into 1/4 inch slices and bake as above.
Mix all ingredients and store in airtight tupperware. I did not specify quantities so that you can choose how you like your proportions of ingredients and how large a batch you'd like to make.
