Avocado Fudge
Ingredients (use
vegan versions
):
1 avocado, ripened
1/2 cup vegan soy butter
1 teaspoon vanilla
1 cup cocoa
3 cups powdered sugar or use powdered sugar replacement
1/3 cup chopped walnuts, optional
Directions:
You don't even taste the avocado in it. It's really amazing. Try it out and lemme know what you think. Also the fudge doesn't come out green, the avo is just used to give the creamyness to the recipe.
In a medium sized saucepan, melt the margarine over low heat. Once aoy butter is melted, puree with avocado in food processor or blender until perfectly smooth. Be sure there are no chunks of avocado left!
Return mixture to saucepan over very low heat and add the rest of the ingredients, except the walnuts, adding the powdered sugar* a portion at a time.
Once all the sugar has been added, the mixture should be thick. Add walnuts if desired, and transfer to a loaf pan. Refridgerate until firm. Now, be patient! If you don't let it firm up, you won't be able to slice it up into squares.
You can dazzle it up by sprinkling powdered sugar and nuts on top if you wish. Really its endless what you can do! Have fun!

hmmm well thats odd. next time make sure your avocados are nice and ripe. or pour it thru a strainer so it doesnt have chunks in it. also ive noticed sometimes when mixing the powdered sugar in, sometimes that can chunk too so you have to mix until your arm is so sore its ready to fall off. hope this helps!

i know that i like avocado smoothies where you use the avocado instead of banana. mmmmm!

this is SO good!! we don't have a food processor so my boyfriend spent about 30 minutes attacking the avocado to get out all the lumps and it actually worked great. it didn't get as hard as most fudge i've had but the taste is incredible. thanks for the recipe!

I made these this morning and was pleasantly surprised! I expected that I would post, "oh, they're tasty, but be sure you like avocado" or "well, they didn't turn out as firm as I'd like" etc. NOT TRUE! They don't taste like avocado (which I wouldn't mind), and aren't as firm as what I'd call "fudge," but they're not gloppy by any means.
VERDICT: So, so tasty that I kept finding excuses to lick my fingers! Not too sweet, not to rich, not too buttery.
ALTERATIONS: Incidentally, I googled this recipe and found it elsewhere as truffles. So I added mint extract to half the batch and plan to scoop them with a melon baller before taking to the Halloween party tonight. Beware! I'll post a terrible photograph of them! I did not add nuts.

Shoot! I meant to add that I pulsed the avocado in my blender about 10 times, then streamed in the melted butter while blending and had ZERO lump problems. Only creamy texture.

okay, so i
finally
made this (almost a year later!). it is really good. it is true that you cannot taste the avocado and it is not green.
i had one problem, but it's more than likely a problem with my blender. i didn't have powdered sugar, so i had to make some of my own with my blender, sugar, and corn starch. my fudge ended up grainy, but i am pretty positive that is because my blender isn't that incredible and it wasn't getting my homemade powdered sugar as powdery as possible.
also, i would suggest using a VERY ripe avocado and only making this if your blender is VERY reliable (not like mine). i had to blend mine forever to get all of the chunks out... but i've known for a while that my blender isn't very good. i'm sure that with a decent blender, this would turn out great!
i ended up pouring my avocado/butter mixture in the pot and going through it with my fingers to catch the couple of lumps that remained. that wasn't that bad, though, honestly.
i'm going to try this again, sometime, but with better powdered sugar and (hopefully) a better blender.
i've never made fudge before! i was quite pleased.

this actually makes a good frosting. i used them for some chocolate zucchini mint muffins i made that needed a tad more sweetness.
on some of them i just used straight fudge and it made a really thick frosting.
for some of the others i blended the fudge with a bit of follow your heart vegan
gourmet sour cream (this one is more like a sour, unflavored yogurt... i don't know if
tofutti sour cream would work for this). the sour cream cut some of the sweetness
(but not too much!) and made it really smooth and creamy.
i don't know which one i liked better.
it seemed odd to me (at first) that this worked, but then i thought about it and really, that's about how you make a frosting anyways. you add powdered sugar, flavoring, liquid, and usually some fat and cream them together into a frosting.
this was delightful!
this is a versatile recipe. it makes fudge, frosting, and i read that someone made truffles with it?

in the fridge now.. i didnt have any nuts so i lined the bottom of the pan with pretzels... tastes really yummy, can't wait til it comes out of the fridge

Excellent! Made this last night. Can't taste the avocado at all. Very creamy and yummy. I only had about half the amount of powdered sugar called for, but it still turned out great. Not too sweet. A great way to use up avos that are overripe!

Excellent! I added a couple of small spoonfuls of peanut butter at the very end of the cooking process and swirled it all up. Love the fudge, though I wish it was a bit more "tough." I let it sit in the fridge for over a day and it still took some work getting it out due to softness.
Will experiment more this weekend!
