Kiwi-Coconut Snackballs

Ingredients (use vegan versions):

    2 kiwi fruits
    2 cup shredded coconut (see below)
    1 tablespoon liquid vegan sweetener (maple syrup, agave, etc)

Directions:

I am always interested in looking for dessert types of treats that do not have a ton of added sugar in them. This recipe makes a nice little snack or dessert but they are pretty delicate, so I don't recommend them for packing in lunches (unless you don't mind if they fall apart!). This recipe is vegan and can easily be made raw.

Peel kiwi fruits and cut into large chunks. Place into food processor bowl with S blade in place. Add coconut and sweetener. Pulse until mixed, about 20 seconds. It will be a light green crumbly paste when it is finished.

Using a 1 tablespoon spring-loaded scoop, press the mixture into the hollow and pack it until it is firm. Squeeze the handle to release the ball from the scoop. Using your hands, carefully press it into shape. I tried rolling them in my hands/palms and they crumbled on me.  Repeat with the rest of the mixture until the mixture is used up. I got about 16 from this recipe.

If you don't have a scoop, you can try pressing 1TB or so amounts together in your hands to make "patties."

**coconut: I used unsweetened dried coconut. I do not recommend using the dried defatted coconut, because you can really taste the "defattedness." You can try using sweetened coconut-- if you do, I would suggest leaving out the sweetener and then adding it in if you need it.

Serves: makes 16 "balls"

I like almost-sugar-free desserts, too, especially ones that are mostly just fruit, like this one.  I haven't tried this yet, but kiwis are on sale, so I might make it today.  In response to the problem of it crumbling up, I bet you could add just a tablespoon or two of applesauce to help bind it.  Or maybe a splash of soy milk.  I'm hoping that if I make it moist enough, I can roll the balls in extra coconut--like fruit truffles.  I'll write back if I do this successfully.

they might be a little more wet if you cut back on the amount of coconut a bit. i went to an earthday fair and a local place makes vegan truffles out of fruit and coconut like this. i've been messing with trying to "recreate" them some and this worked out pretty well. a little banana would also be a good binder but i don't know if banana and kiwi = best friends in the taste department

 Grin Yay! My second ever successful treat! Once again, not a very skilled chef yet, so this was incredibly easy and tasty!

I used the sweetened shredded coconut (2 cups), no syrup, and 3 extremely ripe medium sized kiwi. Also, as someone commented before on using applesauce to bind it together, I used it and it worked --plus it made the snack/dessert all the more sweeter!

I don't even like coconut, but I loved this! Thank you very much!

I give it a 5 out of 5

I used mashed banana (two) instead of the apple sauce and I was really pleased with the consistency.

Also, I formed the balls and then rolled them in dry coconut. I found this also added to the texture.

Ayee, I pressed "post" without saying how much I loved the recipe! My roommate who has always hated coconut gobbled several of these up to her own surprise! Thanks so much for the recipe, it's so simple and now a new favorite!

This was certainly a YUMMY TREAT! Very sweet for its low sugar amount! I used a little bit of egg subsitute so that they would stick togethre more and it worked and didnt fall apart as much...yumm! Thanks!  Smiley

In my haste to make these, I messed them up. They were too wet, I added flour-didn't help. It's in the freezer now. Any suggestions? By the way, they taste awfully good. I hope I can salvage them.

These were really good, my 2 year old daughter loved them! I added some lime zest and rum extract to the mixture to give it even more of a tropical flavor.

Just thought of another idea.... you could roll these in macadamia nut pieces!
