Simple, But Decadent Apple Cobbler

Ingredients (use vegan versions):

    3-5 Granny Smith Apples
    1 cup all-purpose flour
    1 cup brown sugar
    1 1/2 cups old-fashion oatmeal
1/2 cup-3/4 cup vegan soy butter

Directions:

1.  Preheat oven to 350 degrees.

2. Mix Flour, sugar, oatmeal in medium/large bowl.

3. Melt the soy butter (I use smart balance light)

4. Mix margarine with the oat mixture.

5. Peel and core the apples. Cut them thinly, but not too thin.

6. Put apples in a casserole dish that holds them nicely.

7. Spread the oat mixture evenly over the apples.

8. Bake for 1 hour

Serves: 6

Preparation time: 10 mi

oh yeah, its also VERY good if you use self-rising flour. because it makes the topping very cookie like!

this is such a quick and delicious desert.
i added some cinnamon on top of the apples before i put the oatmeal mixture on, just to give an added bite. Smiley

I put a tsp of cinnamon in with the apples and then poured on some caramel sauce, just for fun. I also put some allspice in the crust part. It made a very delicious caramel apple cobbler.

I would suggest using the 3/4 cup butter. I used a half, and then I had to dot it with more halfway through and then some of those pieces burned.
