Traditional Chocolate Chip Cookies

What you need: 

1 stick of vegan soy butter
2-3 tablespoons applesauce
2/3 cup vegan sugar
Ener-g Egg Replacer for 1 egg
1/2 teaspoon pure vanilla extract
1 1/3 cups all-purpose flour
1 teaspoon baking powder
Scant 1/2 cup vegan semisweet chocolate chips
Scant 1/2 cup (if you can find vegan versions) of white or peanut butter chips add those too!

What you do: 

1. Preheat oven to 350 degrees F. Lightly grease 2 baking sheets.
2. Cream the soy butter, applesauce and sugar together in a bowl until pale and fluffy. Beat in the egg replacer and vanilla extract. Sift the flour and baking powder together, then beat these into the creamed mixture. Add all the chocolate chips and stir until well combined.
3. Drop rounded tablespoonfuls of the dough onto the baking sheets leaving room between because these will spread a bit.
4. Bake for 12-15 minutes. and cool on baking sheets for 2-3 minutes then transfer to a wire rack and let cool completely.
