Soyrizo, Beans, and Rice--Oh My!

Ingredients (use vegan versions):

    3-4 cups of cooked rice
    1 package of soy chorizo (or taco-flavored crumbles, fake sausage...)
    1 can of black beans
    1 can of kidney beans
    vegan sour cream (Tofutti brand is delicious)

Directions:

If you have a rice cooker, use it.  Awesome invention.  Otherwise, cook rice according to directions. usually 1:1 water/rice ratio.

Add half (or all if you want) of the soy chorizo...it comes in a tube that is doubled like a traditional kielbasa.

Drain cans of beans and add.

You will probably need to add some salt to taste.

Serve warm with some cold vegan sour cream on top!  Munch!

This mix is also really good in a burrito form---fill a tortilla and eat!

Serves: varies

Preparation time: however long it takes to cook the rice + 5 minutes

This is easy and pretty darn good. I just used 1 can pinto beans and added onions. ( I first browned the soyrizo and onions).  Made with brown rice and wrapped in a tortilla with guacamole.

great dish!  i also made it by browning onions and soyrizo together beforehand.  i  added garlic and tomato to my version.  the soyrizo is spiced really nicely and i didn't end up needed to put any other spices in it!  easy and delicious.

OK....YUM!!!!! I didn't follow the recipe exactly but I might next time.  I used smartlife ground and sprinkled in some cayanne pepper, chile powder, cummin and a little garlic powder.  I really want to try with soy choyrizo but it has a lot more calories and fat but still I want to try it. Thumbs Up
Will definetly make again.

Tasty and super easy. This is definately a recipe I will be throwing together often when I'm time crunched. I used the mixture a few different ways: once I stuffed it in peppers, another time I threw it over a bed of lettuce and topped it with some avacado and ate it as a "burrito bowl" type deal. I love to make this but usually nix the sour cream...tastes great without it and I don't usually buy the tofutti sour cream that often unless I'm planning to make a mushroom stroganoff-type-dealie.... great recipe!

great quick meal! I did as some others suggested and cooked up some fresh garlic and onion in a little evoo first then added the soyrizo to brown a bit. Followed the rest exactly and it was super. We topped our burritos with tofutti sour cream, a fresh salsa and some shredded vegan cheddar. Will def make this again!
