Easy Curried Quinoa With Veggies

Ingredients (use vegan versions):

    1 cup quinoa
    2 cups water
    1/4 cup slivered almonds, toasted
    1/4 cup raisins
    1 large tomato
    2 carrots, grated
    1 handful of sweet peas
    1/2 green bell pepper
    3 teaspoons curry powder
    2 teaspoons chili powder (preferably black/dark kind)
    1 teaspoon nutmeg
    2 tablespoons cilantro
    a good sprinkling of salt (or Braggs if you don't like sodium)

Directions:

In a good sized pot, saute quinoa kernels in a little bit of olive oil until you can smell the goodness of it (about 2 mins), then pour in water, cover, and let boil about 15 mins until absorbed.

Cut up veggies while you wait.  When water absorbed, fluff with a fork and add spices and all veggies except for shredded carrots and cilantro.

After stirring a good 30 secs on heat, remove, dish into bowls, and garnish with carrot and cilantro.

Viola! Deliciousness and simplicity. I hope people enjoy this recipe as much as I have ^^

Serves: Serves 2 (Can be doubled or tripled to suit your need)

Preparation time: Not long at all

I changed the peppers out for broccoli and cooked the veggies a little before I added them to the dish, but this was quite good, if more dry that what I usually expect with asian dishes.  Took about 45 minutes to an hour, which is longer than I at first expected.

yummy recipe, tho i did alter it a bit.. like the previous reveiw, it was a little dry for me.. i like my curries sorta wet.. so i poured in a little coconut milk and a little rice vinegar.. veggy wise i kept it the same except i used sunflower seeds instead of almonds, and added fresh oyster mushrooms, chopped green onion, diced chayote, and half a diced onion.. i also threw in about a 1 teaspoon of cinnamon cuz i like cinnamon in my curry Smiley.. very good tho, and really easy to make.. thanks!

oh yeah.. i also added in some minced ginger and garlic to the cooking quinoa, i have a bunch in my fridge im trying to use up.. and i topped it with hot sauce.. mmm.. spicy  Cheesy

good recipe! It was a little dry for my taste, though, so I added some oil and coconut milk. Plus I added some zucchini and some green onions. It came out great, and tasted great as leftovers as well. I'll definetely be cooking this again!

My omni bf said "not bad", which is a BIG accomplishment for me, since he is a meat and potato man (the bane of my existence). Anywhp. I LOVED this recipe, it was very quinoa-rific! I added more veggies (broccoli, zucchini, grated garlic, corn fresh off the cob, and green onions) and instead of salt used braggs and it was wonderful! Thanks for the recipe! Smitten

This was delicious.  I used some of the suggestions from other users (like adding coconut milk and cinnamon).  I'm feeding a family with an impossible mix of preferences so I only mixed in the raisins and almonds and put the veggies (broccoli, carrots, peas, green beans, zucchini, and celery) on the side so everyone could mix in their favorites.  My husband liked everything except the raisins.  My 5 year old only liked the raisins and the sweet peas.  My 3 year old said it looked "eww" and only ate the broccoli.  But I thought it was great.  Next time I'll cut out the chili powder entirely to make it a bit more palatable to the kids but all in all they'll have to get used to this one.

I thought it was so-so, but I think I screwed up and uses the wrong kind of chili powder spice.  I didn't add much, and I'm glad because it gave it a weird taste.  Without that screw up though I think this would have been good.  Oh well, next time!
