Kale Chips--a.k.a Seriously Addictive Snack!

Ingredients (use vegan versions):

    1-2 big bunches kale
    1 tablespoon apple cider vinegar
    1 tablespoon oil
coarse salt (to taste) or favorite seasoning blend (we love hot n' spicy Spike)

Directions:

Pre-heat oven to 350 degrees Fahrenheit.

Wash and de-stem kale. Chop or tear into "chip" size pieces.

Spread onto baking sheet. Pour the apple cider vinegar, oil and seasoning (1-2 tablespoons) onto kale. Mix to coat all pieces.

Bake for 10 minutes or until crispy. Serve immediately!

Makes: 3-4 servings, Preparation Time: 3 minutes, Cooking Time: 10 minutes

I was very skeptical about this recipe, but intrigued enough to try it. Who'd a thunk it! They're very, very tasty. What an easy way to get some greens in your diet. Even if you don't like greens, give these a try. I did cook them longer than the recipe called for--just eye-balled it until it looked like all the pieces were pretty crisp. I'm trying to hold off eating them all until bookpapa gets back so he can try them. Dunno if they'll make it, though.

These are surprisingly good. I had my doubts but since leafy greens are in season here and we're drowning in them, I figured this recipe would at least use up a bunch. I did as bookmama and baked them longer with an eye on how they were turning out. Most importantly, I was out of kale but had a lot of chard on my hands. So, yes, I used chard (big green leaf with red veins and stems, in this case) instead of kale and it still tasted great to both of us! Can't wait to experiment with other seasonings. Thank you for an excellent and original recipe!

I have to add that no picture will do them justice. For quite a while I kept passing these by because I didn't think they looked particularly good in the pictures. Don't let the pictures fool you, though. You can see by the reviews that everyone liked them. When I saw the review by Violetsky1216 I tried them and she's right--"these are really freaking GOOD!!!!!!" We've had them several times now. I have found that if you manage to have any left and they get limp in the fridge, about a minute in the toaster oven will crisp them up again.

Kale is a leafy green. It has sort of ruffly leaves with a tough stem running through each leaf. You trim off the stems. Other than spinach and varieties of lettuce, I don't think I've had any other leafy greens and kale does not taste like spinach or lettuce so I'm not sure what to tell you about what it tastes like. It tastes green.  Wink

hummm...Ive got to try this...I can get my hands on almost unlimited amounts of Kale...Id have to say that kale is slightly bitter tasting but not really disagreeable. I live it. Gonna try these "chips" esp. If it will keep me from potato chips! Cheesy

Amazing!  I used chard instead of kale and it came out great.  My chard was even a little old and limp, but it didn't matter.  I kinda over salted them, unfortunately, but I'll know better next time.  Thanks for the great idea.

Kale tastes like kale. You have to try it. I like it sauted with leeks and lemon juice. I'm going to try this recipe tonight. I can't resist.

I just made these with a friend of mine for one of our "baking-dinner parties" and they were FANTASTIC! We just stood around the pan and ate them all right after they came out of the oven. I'd so highly recommend these to go alongside a grilled tofu sandwich or basically anything for that matter. These are a great and easy way to get a serving or two of greens in. Phenomenal. Thanks for sharing the recipe, I'll definitely be making these again soon.
