Vanilla Chic LatteIngredients (use vegan versions): 1 cup plain soy milk
1/2 - 1 1/2 teaspoon Chicory [depends on how strong you want it]
1/4 teaspoon vanilla extract
shaved chocolate or cinnamon [optional]
Directions:Prepare your mug first, place 1/2 teaspoon of chicory into your mug [or more if you like strong taste] along with the vanilla, set aside.
In small pot heat soy milk on a medium -high heat. With a small whisk [or fork, I don't have a whisk so that's what I use and it works just fine] whip constantly until soy milk is well heated; not boiling, just hot. If you don't like foam don't whisk, just stir.
With a large spoon to block the foam that you've created whisking, pour the hot soy milk into your mug. Stir, and spoon the froth on top. Top with shaved chocolate or cinnamon. ENJOY!
** Side Notes:
1) Instead of using vanilla extract and plain soy milk you can opt for using vanilla soy milk instead. I just don't because I find the drink ends up too sweet.
2) If you have no clue what Chicory is, it's a dry instant coffee like drink, but it's not coffee. Although incredibly similar in taste, it's made of barley and chicory and has ZERO percent caffeine. I discovered it while pregnant and have been hooked since. It's usually in the coffee section at your grocery store with the instant coffees.
