Spill the Beans Minestrone

What you need: 

1 tablespoon olive oil
1 medium onion, chopped
2 cloves garlic, finely chopped
2 cans (14 1/2 ounces) vegetable broth
1 can (15 1/2 ounces) garbanzo beans, rinsed and drained
1 can (15 1/4 ounces) red kidney beans, rinsed and drained
1 can (14 1/2 ounces) Italian-style stewed tomatoes
2 cups kale or Swiss chard, chopped
1/2 cup small shell-shaped pasta
1/4 teaspoon Italian seasoning
1/4 teaspoon crushed red pepper flakes

What you do: 

1. In medium saucepan, heat oil over medium-high heat until hot. Cook and stir onion and garlic 3 to 5 minutes or until onion is translucent.
2. Add broth, beans, tomatoes, kale, pasta and seasonings; bring to a boil.
3. Reduce heat; cover and simmer 10 to 12 minutes or until pasta is tender.

SO HOW'D IT GO?

Yummy! I used 3 diced tomatoes instead of the canned tomatoes.

This soup is great....  I added some corn , zucchini , carrots and celery and it tastes sooo yummy!!!

This was a really tasty and easy soup to make. I used the Swiss chard because I couldn't find any kale and it worked out nicely.

I made this last night and loved it!  The kale was great and held up really well.  I added whatever other veggies I had in the fridge and added a can of tomato paste to make it taste more tomatoey and it was wonderful.  Thanks for the recipe!

I am going to try this recipe tonight.  It has all of my favorite ingredients; except for the pasta.  I think that I will add  quiona or barley instead of the pasta.  I just bought my first bunch of kale today so I can;t wait to use it.  I will let you know how it turns out!
