Best Ever French Toast!

Ingredients (use vegan versions):

    1 cup soymilk (plain or vanilla)
    1 1/2 tablespoons nutritional yeast flakes
    2 tablespoons flour
    2 tablespoons sugar
    1/2 teaspoon salt
    2 teaspoons vanilla extract
    1 teaspoon almond extract (you can add more to your taste)
    dash cinnamon
    dash apple pie spice or nutmeg
    bread

Directions:

Mix all the ingredients together in a bowl with a whisk.

Heat up skillet.

Soak bread in mixture but be careful not to over soak or else it’s going to fall apart.

Brown in skillet, flipping as needed.

Top off with fresh fruit, syrup, and powdered sugar.

Serves: 6 slices

Preparation time: 15 minutes

I was craving the "French toasted peanut butter sandwiches" that my dad used to make for me in a big cast iron skillet.  This recipe really did the trick!  I used "spiced" soymilk in place of the vanilla.  Then I topped with peanut butter and banana slices.  I was very pleased at how nice and brown it turned out, and they didn't burn at all (which I have found happens with the banana french toast unless you use a ton of oil).  Yay!

I have never had non-vegan French toast so I don't have anything to compare this to, but it was really good!  Although I dipped it in the mixture only briefly, mine came out slightly soggy in the middle -- something I would like to learn how to do differently, but overall yummy!

Can you taste the nutritional yeast? Why is it there? ...nutrition?  Grin

You cant really taste the nutritional yeast since there is such a minimal ammount it just gives a rich custard like flavor to the bread that wouldnt be there without it.

I had to add another 1/2 tsp of vanilla to cover the taste.

My bread was so dry 4 slices used up all the batter!

I used two day old french baguette cut into thick slices for this. If it wasn't for the thick outer crust of the bread I'm afraid it would've been far too soggy. It tasted really great though, especially with maple syrup!

Yeah you have to be careful when soaking the bread thats probably the trickiest part of the whole recipe.
I don't personally like the taste of nutritional yeast and I still think the 1 1/2 tablespoons is fine. You can always reduce the amount or omit it all together though.

I made these for breakfast yesterday and my brother who's a non-veggie said they were the best french toast he's ever had. Now he's begging me to make more this morning haha :]

So the nutritional yeast is genius. I never would have thought of that but it really gives it a good flavor. Great recipe!
