We liked these, but they aren't my favorite pancakes. I used ww pastry flour, but otherwise followed the recipe. They were good pancakes, but not really fluffy, and stayed slightly gooey in the middle (compared to other pancakes I've made). I'm always happy to try new recipes. Oh, I used flax/water for the egg replacer.

i was really disapointed with these, i did everything correctly
but it was more like pancake scramble Sad
it kept sticking to the bottom of the pan, no matter how much oil i sprayed or how much nuttalex i used
and the batter was really thin too, i think my egg replacer doesn't work /shrugs

i like the simplicity and ease of this recipe.  i've used it two weeks in a row to score some brownie points with my GF Tongue by making her breakfast.  i don't tend to make the individual pancakes very large and the recipe ends up being enough pancakes for both of us. 

first time i used half a banana and second time i used a whole banana (for egg replacer) - came out good both times.  oh, instead of using sugar, i use agave nectar for the sweetener.

i use cooking spray and these do cook up pretty quickly.

one question - are these supposed to "bubble" like normal pancakes (to know when it's time to flip them)?  mine don't bubble (it could be because of the no-sodium baking powder that i'm using, not sure...) but it's pretty easy to eyeball and know when to flip.

i like to put some frozen blueberries in a small pan, along with a bit of water, and heat that up to make a nice syrup for the pancakes - i haven't perfected that yet but still working on it.

These pancakes are UNREAL! I substituted apple sauce for oil, and they turned out perfect! Everyone I have made them for loves them, as well.

my these were delicious! used a flax egg [added a nice nuttiness], rice milk instead of soy and cut the oil by 1/3. also added 1/2 tsp of pumpkin pie spice.
they fluffed up nicely!
couldn't stop eating them, almost burned myself because i couldn't wait until the pancakes were off the pan to eat them!  2Funny this is my new go-to recipe for pancakes, thanks so much for this!  Smitten

just made these this morning...i used whole wheat flour and organic cane sugar and flax seeds as an egg replacer. super easy and very good! i used smart balance in the pan instead of oil....gave them a good crispy edge. i will make these at LEAST once a week! thanks!

does anyone know about how many pancakes this recipe makes?
i quadrupled the dry ingredients to bring camping (yay!) and i have about 7 people to feed, half of which are hongry hongry men. granted, there will be hash browns and whatnot but i'm a disposal myself and could take down at least 3 pancakes without batting an eyelash......  but i would rather have leftovers than not enough Laugh

ok, I have problems with this recipe.

First off...it was VERY tasty and I will give it that.

However, I had so many problems with the batter. I don't regularly make pancakes but I had just made pancakes last week with a different recipe that had turned out fine...so I thought I would be able to handle this recipe just as well.

The batter stuck to all of my non-stick pans and I had to soak them all to get the stuff off. At first I could not flip them at all, they just fell apart. So, what I did is I added more flour to make the batter thicker, added more banana and more baking powder. Even then, they stuck really easy. I had to coat my non-stick pan with a fair amount of oil to keep them from sticking and kept having to re-apply it between pancakes.

It was worth it however as the pancakes were very tasty. I tried adding some blueberries to a few but decided they tasted great with just the banana and some cinnamon.

P.S. I did not use vanilla as I think it's overrated.

I've made these pancakes a few times and LOVE them.  My non-vegan husband loves them as well.  I followed the recipe exactly, using Ener-G egg replacer, but plan on trying some additions for variety next time as suggested in previous posts.

I used a cast iron skillet which I sprayed very lightly with Pam before pouring each new pancake.  It was difficult to tell when to turn them as mine didn't bubble up either, so I kept a close watch by sliding a spatula underneath the edge of the pancake and turning it up just a little bit to peek.

I have tried several vegan pancake recipes and am usually disappointed. Most vegan pancakes are too dense or too mushy on the inside and burnt on the outside or taste like corn fritters.  Nice medium temperature is key with pancakes, especially when the initial batter goes in.  I followed what others mentioned and used a banana for the egg and rice milk instead of soy.  These were great thanks.

Mmmm... so simple, but so delicious. I halved the recipe, used 1 tbs agave nectar instead of 1.5 of sugar, used Ener-G egg replacer, and threw in a few chocolate chips.
these pancakes + ice coffee = best vacation breakfast to date.

I made these with 1 banana and blueberries.....so yummy I did'nt even use syrup.  I just stood at the stove and ate them as they came out of the pan.  Smitten
