Green Beans and Pasta

Ingredients (use vegan versions):

    200 grams green beans
    200 grams pasta, I use penne
    1 medium onion
    1 teaspoon olive oil
    1 teaspoon vegan margarine
    salt
    pepper
    soy sauce
    garlic to taste

Directions:

Boil water and cook pasta as indicated on the package. Drain and let it cool.

Chop the green beans and cook them in boiling water with a little salt until they are tender.

Chop the onion in big pieces and the garlic in really small pieces. In a frying pan, heat the oil and margarine, add the onion and the garlic and cook for about 2 minutes; then, add the green beans and fry for another 2 minutes.

When the green beans are soft, add the soy sauce (about 1 tablespoon), the salt, pepper and pasta. Fry for another minute and serve warm. You could have this delicious pasta as a side dish or as a main dish with fresh salad.

Makes: 2 servings, Preparation time: 10 minutes, Cooking time: 10 minutes

so simple and soo good! i used a lot of garlic and added some braggs and no-salt seasoning. yumm! i also did this the lazy way--boiled pasta, added beans during last couple minutes, drained and then heated the "sauce" in the pot before returning the pasta/beans. will make again!

this was so good, and so easy. i didn't have any garlic or onions on hand, so i used garlic powder and ground thyme. i sauteed the green beans in the olive oil instead of boiling them first. i will definitely be making this again!

I didn't have onions either but I used the method of boiling the green beans and pasta together and it worked out fine. My boyfriend also added  cheese to his and he said it was really good. I really liked this recipe and will be making it again sometime soon! Thanks so much.

ok so i tried this tonight and i did everything the recipe called for and then i decided i wanted some smokey flavor also..so i diced up two pieces of "bacon" (i used lightlife smart bacon) and man oh man was it the bomb diggidy...i will defiinately turn to this for a quick yummy bowl of comfort food when im hungry. thanks for the idea!!! well let me just start by saying i don't like green beans. but i've been trying to make most of my grocery shopping consist of fresh veggies (instead of stuff that comes in boxes and cans!), so this week it meant giving the green bean a shot. and oh i am so glad i decided to go with this recipe! I LIKE GREEN BEANS NOW! Smiley i followed the recipe but cut down for 1 person. fresh garlic and onion are a MUST; i used bragg's so salt wasn't necessary, but do include a healthy dose of black pepper! this was so delicious.

100 grams is about 4 oz so 200 would be 8 oz.

I sauteed the green beans in sesame oil instead of boiling and added tons of garlic and red pepper flakes.
A little dry, but I just realized I didn't add the soy sauce and probably added a lot of parmesan.  Still, delicious, even the second day.
