Wonton Asparagus Ravioli

Ingredients (use vegan versions):

    30 vegan wonton wrappers
    8 stalks of asparagus, chopped
    garlic
    one small onion, chopped
    teriyaki sauce
    glug of sesame oil

Directions:

To prepare asparagus:

Chop up finely, mix with chopped onion and sautee in garlic and oil about 10 minutes or until cooked down.  Stir in teriyaki sauce to taste. Either mash a bit with a fork or blend for a few quick seconds to get a smoother consistency.

To prepare wontons:

Spoon a small amount of asparagus filling onto one wonton.  Take another and seal the two using a fork (I had to wet the edges). Now warm sesame oil in pan and throw in some seasoning if you like–you’re about to sauté the ravioli, so last chance to add any flavors.  Sautee about 5 minutes, flipping if you like, and serve!  Drizzle some teriyaki sauce on top.

Serves: 3

Preparation time: 30 minute

these are really good and pretty easy to make.
I used the simple teriyaki sauce recipe from this site to go with it.
I think that if I were to switch the teriyaki sauce with a pesto or alfredo something like that it would be really good italian favlored dish as well. nice and versatile, thanks for the recipe   Cool

I made this again with some new ideas added to it. I processed the raw onion and asparagus first with a clove of garlic and then threw it in a frying pan on top of some heated sesame oil. It turned a bright green and sauteed nicely. I replaced the teriyaki sauce in the recipe with the creamy garlic sauce recipe on this site. the result was great. I will make it again this way and will probably keep experimenting with different sauces. I do like the asparagus/onion.garlic filling  Smirk it is a classy flavor dimension.

super easy and super excellent! i was tempted by the more italian variation that animal_g suggested but in the end laziness won out  Extra Cool. i left the filling a little chunky, and that was fine. hm. what else...oh. i also only used one wonton wrapper  because with two it seemed like not enough filling for all of the wrapper part. ee i have a picture too (:

These went over really well, and seeing as how I grow my own asparagus it is also a very cheap dish to make.
