The Fabulous 8 Minute Micro-Baked Po-Tay-Toe!

Ingredients (use vegan versions):

    1 large potato
    whatever vegan yummies you like for inside/toppings

Directions:

Take the tater, stick it in the micro.  Zap it for 3 minutes! (maybe a little less if its a smaller potato).  Wrap it in Aluminum Foil and wait 5 minutes.  Ta Da!!!  Oven-fresh tasting Baked Po-Tay-Toe!

Enjoy with all the vegan yummies you like on your spud.

Serves: 1

Preparation time: 8 minutes

Don't forget to pierce the potato several times with a fork before cooking, or you might have Micro-Splattered Po-Tay-Toe!!!  Grin

does it really only take 3 minutes to cook in the microwave? I shall have to try this when Im wanting a potato...

 Smiley  This really works and the potato is so creamy.  I just finished making this for my 1-year-old to eat with his dinner.  He devoured the potato chunks I cut up for him and he wanted more after the first round.  Thanks for the simple and delicious recipe!

***Oh, I did pierce the potato with a fork a few times before I put it in the microwave. No splattered taters over here!!

you shouldn't microwave your food - it depletes the nutrients, and actually alters the DNA of your food so that your body is unable to recognize it as something nutritious. your body then evacuates it as quickly as possible, instead of allowing it to slowly digest and absorbing all of the vital nutrients.

Oh yes, stabbing the potato definitely is necessary -- I typed this up real fast and it totally slipped my mind...

And yeah, I know microwaves are terrible, but so is waiting forever for a baked potato, and it's the only method of cooking available in my dorm :-(

I had to microwave this for a little longer maybe 1 min (but my microwave is old and the potato was HUGE).  Thank you sooooo much for this cooking technique it save me from making a bag of tortilla chips my dinner.  While the end result wasn't exactly like a oven baked potato it was still delish with sauted mushrooms, broccoli, and onions on top.
