Kale Chips

Ingredients (use vegan versions):

    1 bundle of kale
    Kosher salt to taste
    olive oil spray

Directions:

1. Preheat oven to about 350 degrees.

2. Wash kale and tear leaves into chip size pieces.(Leave stems)

3. Spray cookie sheet and kale pieces LIGHTLY with olive oil spray.

4. Sprinkle lightly with Kosher salt.

5. Bake until edges turn slightly brown and chips appear crispy.

6. Enjoy!

Nutrition Facts:

Serving size-about 1 cup Calories-33 (Kale w/o olive oil spray) Fiber- 1 gram Protein- 2 grams

Kale is low in Saturated Fat, and very low in Cholesterol. It is also a good source of Dietary Fiber, Protein, Thiamin, Riboflavin, Folate, Iron, Magnesium and Phosphorus, and a very good source of Vitamin A, Vitamin C, Vitamin K, Vitamin B6, Calcium, Potassium, Copper and Manganese.

Serves: About 2

Preparation time: 10 minute

These were surprisingly good!!! All I put on them was seasalt.  Didn't spray the "chips" with olive oil, just the pan and baked away.  I found that some of the tougher bits took longer to cook so I took the done chips out and left the rest in for a few more minutes.  I ate an entire bunch of kale while watching a movie and it was delicious.   Much healthier than greasy potatoe chips.  Possibly this would go great with veggie burgers and oven-fries.

unbelievably delicious. i was skeptical at first, but honestly, these are so great! i oiled my pan with coconut oil, and didn't oil the chips, just sprinkled with provencale herbamare...they are still in the oven, but i had to have a taste halfway through, so i know the finished product will be amazing.

Thanks these are awesome.  I will never eat kale any other way again...
A few tips for those who don't eat them on the spot--when you store them in a container they tend to lose a little crispiness.  Also, if you try to store them in your desk drawer for a few hours, watch out when you open it.  P-U!!
I'm going to experiment with other veggies and see if I can get the same results.

I was really excited to try these, but i didn't like them at all!  The smell filled the whole down stairs of my house.  I couldn't get past the smell to enjoy the bite that I tried.  And it left an aftertaste.  They did crisp right up like they were supposed to  and they looked alright.  I guess it's just a taste preference thing and I didn't prefer the taste.  oh well.

Wow!!  I devoured these and I have more in the oven right now.  Yes, they are pretty stinky when cooking and very strongly flavored (it's worse when they're overbaked).  I tried them with olive oil and crazy mixed up salt (yum!  but I think I used too much, too oily) and then again without oil and with a salt-free garlic/onion/spice mix (oh yum!  slightly less crispy without the oil?) .  So it's a good thing hubby isn't here right now or he'd pass out from my stink.  But soooo goood and perfect texture.

Delish!  These are fantastic.  I only sprayed the pan a bit so they wouldn't stick and used very little salt.  Lots of kale flavor and an amazing crunch that will satisfy any chip craving.  Hurray!

THIS WAS GREAT!  I was a little skeptical about it really working, but they really were crunchy like chips.  They sort of melted in your mouth as well.  I think I had to keep them in the oven a little longer than the recipe said, but each oven is different.  FUN TO EAT.  Just like potato chips - you can't eat just one.  Try them!

O..M...G... These were amazing!  I have never had Kale before (bought some for another recipe) and decided to try this, and WOW! these are delicious!  My omni dad liked them too.  My mom ... didn't, but she doesn't really like vegetables, so her opinion doesn't count  Roll Eyes

Just for the record, and for those who don't know, kale does not contain any cholesterol. Cholesterol only comes from animal foods. There are no plants that contain cholesterol. This includes canoloa oil, olive oil, ect.

My first taste of Kale and it was really good.  I took someone's suggestion of adding NY and Bragg's to the spice mixture.  I was almost scared to try them because of how they looked but was pleasantly surprised at how good they actually turned out to be.  I didn't have a problem with them being soggy...all were really crispy.

Yum. i have never had Kale before and it has an interesting bitter taste, but very mild when you cook it like this. Thanks a lot for this low fat recipe!  i shall by more kale in the future!

I am in the process of making these as I write.  I really love the texture of the chips as the recipe states, more so than not spraying the Kale with olive oil at all.

I've been looking forward to doing more with Kale and this will definitely stay in my recipe box.

My partner made these in the toaster oven b/c we don't have a regular oven.  Our plan was to serve them with the cauliflower hummus in "Veganomicon".  But we forgot we did not have a working blender.  So the cauliflower hummus was more of a chickpea/cauliflower mush with tahini sauce, and the kale chips never quite crisped up.  But they all actually tasted fabulous together!  Just not what we had originally envisioned.  Oh, and he spiced the kale chips with some kelp and cayenne.
