Soy Chorizo and Potato Tacos

Ingredients (use vegan versions):

    1 large russet potato, peeled and diced small
    1 large onion diced and divided
    2 cloves garlic
    1 link of incased large soy chorizo
    handful of cilantro, chopped
    salt and pepper to taste
    corn tortillas salsa, lettuce and cilantro for topping

Directions:

In a large saucepan, heat about a tablespoon of olive oil. Add potatoes and half the diced onion and cook until lightly browned. Season with salt and pepper, add about 1/4 cup or so of water and put a lid on the pan. This will help the potatoes cook faster.

In the meantime, in another pan, cook the garlic and other half of the diced onion until almost soft. Add the soy chorizo to the pan. If you have never worked with this before, you will need to cut off one end of the plastic casing and squeeze the "meat" out of it into your pan. It resembles ground taco meat and is orange/red in color. Continue cooking over medium heat until all ingredients are hot and browned all over. Season with extra salt and pepper if need be. The sausage is pretty much spiced and flavored so minimal salt is probably best.

When the potatoes are tender, add them into the pan of and stir all ingredients to combine. Remove from heat.

Spoon mixture onto  warmed corn tortillas and top with homemade salsa, lettuce and extra cilantro. I like things hot so I add extra habanera hot sauce on top! They are great for breakfast, lunch or dinner!

Serves: 8

Preparation time: 20 min or so

mmm... this looks great!!! unfortunately, i don't have soy sausages so i think i might make it without them and add spices. i think i'll make homemade corn tortillas. yumm. by the way, i love your hair!  Cheesy

We tried this last night. It was great! We added avocado, sour cream, and homemade salsa. It's definitely going to be one of our new family recipes.

We used this filling for burritos and it was quite tasty, definitely worthy of 4 stars.  I must say though, if I was assigning stars based on aesthetics, I'd have to give this a big 0!!  It looked like a big skillet full of Alpo!  Mmmmm, Alpo never tasted so good!!

This was a great breakfast/lunch recipe. I loved them! My family loved them. I didn't use salsa since the soyrizo was flavorful enough on it's own, I added some back pepper and it gave it that extra kick. I chopped up some romain lettuce, tomatos and a little bit of shredded cheese, soy or cheddar. It was excellent! Really recommend these!

this recipe inspired me to buy soyrizo at the store when it was heavily discounted and i'm happy i did.  it's one of the best fake meats i've tried.  all the seasoning was in the "meat" so I didn't have to do much.  Definitely a great meal for the middle of the week when things get busy and I don't want to spend a lot of time on dinner.

i added some peppers from the farmer's market, along with red potatoes from my own garden!  delicious.  served with fresh salsa made with veggies from the farmer's market too, and really, there's such an enhancement of the flavors when it's locally grown!  anyway, this is great for a no-fuss, delicious meal.  wish i'd bought more soyrizo while it was on clearance!
