Banana Cake
Ingredients (use
vegan versions
):
1 medium banana
7 tablespoons olive oil
1 tablespoon vinegar
1 teaspoon salt
1 teaspoon baking soda
1 tablespoon baking powder
1 teaspoon vanilla
1 cup sugar
1 1/2 cups flour
1 cup water
3 tablespoons cinnamon
Directions:
Place banana in plastic bowl and put it microwave for 20 to 30 seconds. Remove banana from microwave and stir well until banana is mushed. Add the flour to the banana and mix well.
Add olive oil, vinegar, salt. Stir.
Add baking soda, baking powder, and cinnamon. Stir.
Add sugar and stir well; and finally add the water (before this your dough may seem gunky, but when you add the water and stir well it will look like normal dough).
Place in small greased pan in a 350 degree oven for around 30 minutes.

Took longer than it said but I still recommend it. I also added a Banana frosting to it which put together it's 5 star recipe.

it's amazing!!! I used banana extract instead of vanilla and used all whole wheat flour. It was really sweet and I also used a banana icing on top

It's really good! I omitted the cinnamon and added cocoa powder and vegan chocolate chips. Nummy! @_@ (Also, make sure you guys use really ripe bananas or the flavor will be really weak). I'm going to make another one tomorrow with almond extract and crushed almonds :D

Is it important to add the ingredients in the order the directions give? I've never seen a cake recipe where you create a thick dough and add water after that. Guess I can experiment next time.
This was very good, but I thought I really screwed it up because the ingredients are out of order according to the directions, so I inadvertently added the flour at the end after the sugar. Also, the directions don't say when to add the vanilla, so I accidentally skipped it. This hit me after it was already baking a few minutes, so I took it out of the oven, slightly baked, and stirred in the vanilla. It still came out very good - moist, light and fluffy. I left out the cinnamon because I just wanted banana cake, not banana-cinnamon cake. I also used a large banana (didn't microwave it) instead of a medium. I topped it with the Faux Cream Cheese Frosting from the Incredible Vegan Carrot Cake recipe here on vegweb and topped it off with chopped walnuts. Yum.

Oh... I also used canola oil instead of olive oil, simply because OO sounded too adventuresome.

Delicious! Very moist......used whole wheat flour and tossed in some mini chocolate chips. I'll definitely be making this again.

it was better than i expected. while it was cooking in the oven it smelled delicious.
but it didnt rise as much as i expected. do you think it was something i did wrong?

Hey you Guys! Thanks for the great reviews and awesome pictures! Everything looks amazing.
Vegan Christine- When I made this recipe I was just starting out creating my own recipes so I just wrote it exactly how I made it. My advice would be to mix the dry ingredients and then the wet ingredients all together. Sorry for the mix up!
jenjho- If I remember correctly, the cake is supposed to be thick. Banana cakes usually are. If you wanted a lighter cake my suggestion would be to add less oil and less banana

This cake is so moist and delicious! I used all whole wheat flour, and I topped the cake with the banana buttercream frosting from the Vegan Yum Yum blog. Excellent recipe!

This was yummy! I used canola oil instead of olive oil, as mentioned earlier. Unfortunately, I added too many chocolate chunks to it, so it came out VERY chocolately, almost like a chocolate banana cake, but it's still delicious. I also omitted the cinnamon and added an extra chopped banana and chopped walnuts. I topped the cake with a peanut butter frosting. So yummy! Definitely a keeper. Thanks for the recipe!

FANTASTIC!!! I used whole wheat flour, canola instead of olive oil, and added an extra banana cut up to the batter. I also made cupcakes with a tofutti cream cheese frosting and crushed walnuts over top. I was a bit concerned at first because it seemed too thick and then once I added the water too thin but they turned out perfect. Thank you very much for the recipe it is definitely one of my favorites.

I made this using 4 Tbsp veggie oil, and 3 Tbsp apple sauce, and omitted the cinnamon. And I made cupcakes instead of a regular cake. I have to say, they rose WAY more than I had expected them to, but they still came out absolutely delicious! They are definitely very light and fluffy, but the tops are nice golden brown and chewy. Topped with peanut butter frosting, they're to die for.
