Delicious!
I didnt make them too soft so I had a little crisp crunch to it. I LOVE IT! Will DEFINITELY be making this again. I just used a normal vegetable peeler I got at the Dollar Tree. Carrots are cheap. This dish is great.
Sides it with a couple of slices of whole wheat toast and its the perfect lunch.

I tried this recipe last night for some non-vegan friends and they really loved it. The texture was terrific, they actually turned out a bit like noodles. We just served it with some sauce and portobello mushrooms that the hubby grilled up. I think next time I might add a nutritional yeast/cheesy sauce to it for the kiddo.  Thumbs Up

Very tasty!  Though next time I'll clear a bigger work area to exercise my lack of peeling skills--  I flung carrot bits everywhere!  I really do like the clean flavor of this recipe.

Haven't tried this recipe yet but I think I'm going to sub the pasta sauce out for salsa... any ideas on how that would taste?

tasty, very simple and great for me since i cant eat wheat pasta. wheat free pasta is too expensive!!! this works with mushroom and tomato sauces. warm salsa could be okay.

good for any type of carrot, even those strange ones that smell very sour.

Easy to eat, prbably interesting for new vegies and kids.

Have you tried De Boles?  I'm celiac (and on a tight budget), and we use this all the time.  They make rice and corn pasta (certified gluten-free) and it's something like $1.50 a box, we get it at WalMart and Target.  Just wanted to let you know Smiley

im from denmark not usa, i wouldnt shop at walmart for ethical reasons. there are few cheap pastas here to eat. I have to go to sweden, but im not going to sweden to get pasta! I think this is a great alternative. Plus carrots grow here so its local. my partner loves this dish and its easy for him to make.

I promise, I wasn't encouraging you to go to Walmart...just trying to state that it's inexpensive and easy to get ahold of  Wink  Pasta was one of the things that ds was most bummed about losing when we found out that we both had celiac, and he loves De Boles.  It's made purely from the grain, so there are no animal products in there, either.  I agree though, this recipe is a yummy alternative!

I made this on a whim, not expecting too much.  I shaved the carrots and simply threw them in the oven on some parchment paper for a while.  Once they were done I slathered on some sauce.  It was absolutely delicious and so simple.  I make this all the time Smiley

So much better that regular spaghetti - and I'm a carboholic!
I stole some carrots from my mom's house so I could make it again....I just wish my hubs liked cooked carrots...

oh my gosh!!! Sooo good. I only had one carrot Sad so I cut down on everything else but it was sooooo good. And a healthy alternative to pasta. This is def going to become a weekly meal

I have a ton of carrots I need to use so this recipe came in handy. I added some zucchini. Made some homemade pasta sauce and added broiled tofu for some protein. It was very tasty. I will definitely make this again.
