Fantastic Simple Crustless Tofu QuicheIngredients (use vegan versions): Veggies:
2 heads of broccoli, sliced into florets
1 1/2 cups of sliced mushrooms
1 large leek, sliced
1 can of artichoke hearts, quartered
2 cloves of garlic, grated
1 large handful of green onions
For tofu quiche base, puree:
1 package of extra firm tofu
1 package of silken tofu
2 tablespoon of nutritional yeast
1 tablespoon of tahini
1 1/2 teaspoon of arrowroot mixed with 1/4 cup soymilk
1 teaspoon each turmeric and onion powder
Directions:Preheat oven to 375 degrees F (350 if its a convection oven).
Lightly oil a frying pan and fry veggies until tender, then fold into your pureed tofu quiche base and pour into a glass pie plate.
Bake for 30-40 minutes of until nicely tanned on top

Let cool for a bit and enjoy!!!!
Feel free to experiment with the veggies! I usually also throw in a green bell pepper if I have one.
