"Butter" Beans

Ingredients (use vegan versions):

    1lb dried lima beans
    2 quarts water
    salt & pepper
    1/4 cup vegan butter

Directions:

Soak dried beans overnight.

Next day, simmer beans in water for about an hour (until soft).

Add salt & pepper & butter.

Let simmer until sauce becomes sort of thick.

This is a southern favorite made vegan Shocked)

Sounds great!  I am a southern girl and I LOOOOOVE lima beans.  I like the Fordhook lima beans and I use a white onion(cut in half), adobo seasoning, and a little Smart Balance.  They turn out so creamy and good.  Thanks for the recipe!

These were so good and simple to make!  They taste just like beans my dad used to make.  He called them "soup beans".  Yum.

I would recommend using less water or draining off most of the liquid before adding the marg, salt and pepper.

I love these.  So comforting.  I only added enough water to just cover beans when cooking and they came out great.  Didn't need to cook them for a full hour though.  I served them with some very garlicky collard greens.  Perfect for a cold evening! Thumbs Up

Love these. Try adding some Tony Chachere's creole seasoning instead of the salt and pepper, fabulous!
