Easy, Cheap and Delish TacosIngredients (use vegan versions): 1 cup dried T.V.P. OR 2 cups of your favorite frozen ground beef substitute
1 1/2 tablespoons chili powder
1 teaspoon cumin
dash cayenne
1-2 teaspoons soy sauce or Bragg's
1/2 med. onion, chopped
1 clove garlic, minced
2 teaspoons vegetable oil
salt to taste
Directions:**Here is my personal recipe for taco filling that I have been making for years. I prefer to make it with T.V.P. (Textured Vegetable Protein - available in the bulk section of the health foods store) because it's so cheap. However, it's just as tasty with a frozen ground beef substitute (such as Morningstar crumbles) and those are readily available in most supermarkets. Don't use packets of Taco seasoning mix - they usually have b**f in them
In a large skillet, saute onion in veg. oil over medium heat for about 3 minutes. Add garlic, cook until fragrant, about 1 minute.
To make with T.V.P.: In a small saucepan, add dried T.V.P. to 1 cup boiling water. Quickly add chili powder, cumin, cayenne, and soy sauce and stir until all of the water and spices are absorbed.
Incorporate the T.V.P. mixture with the onions in the skillet. Add salt to taste.
To make with frozen ground beef substitute: Add the ground beef to the skillet with the onions. Heat through until thawed. Add chili powder, cumin, cayenne and 3/4 cup water. Raise heat to high, simmer until all of the water and spices are absorbed. Add salt to taste.
(You can omit the soy sauce, I use it to color the T.V.P. to make it look more appetizing.)
Makes enough filling for 10 taco shells (1 box) or a really huge plate of nachos :-) Just add cheeze, lettuce, salsa, guacamole or whatever else you like.
