Crazy Good Banana Muffins

this is a good solid muffin recipe. i kept them in the fridge and the flavor got better the next day.  if i make them again, i will definitely try to make them a day ahead of when i plan on eating them.    they turned out well using white whole wheat flour, and i also added some vanilla extract.

I LOVE these!  I have had so little success in the kitchen making vegan items that the fact this has turned out beautifully has me psyched.  Thank you so much for posting this recipe

Great muffins, a little dry though. Not sure how to correct for that. Maybe I just don't bake them right.

I have made these 5 times, now, and they are the moistest muffins ever (they really are so perfectly delicious)  !  However, I do change a couple of things slightly - I use 3 large bananas (instead of 4) & a 1/2 cup of applesauce (instead of a 1/4).  Not sure if that's what does the trick, but you might want to give it a try?

I added vanilla & choc chips (Tropical Source) and they are totally amazing. They are so light & fluffy =]
They will be added to my  recipe box.
